香港グルメ激戦区・Central/SOHOエリアでも評価が高く、『ミシュランガイド香港・マカオ』でも二つ星を獲得しているファインダイニング。姉妹店のÉPUREとともに香港のモダンフレンチをけん引する存在です。
アートスペースやダイニングの入った複合ビル・H Queen'sの25/Fにあるお店は、arbor(ラテン語で「木」の意味)の名前に沿って、暖かみのある柔らかな質感と自然な色調の造り。間接照明やアート・装飾などもシックでモダンな雰囲気です。外側は一面ガラス張りなので、昼は採光も良く明るく開放的。夜は眼下に印象的な香港の明かりを臨みます。海側は個室になっており、ビルの隙間からはヴィクトリア・ハーバーも見ることができます。
香港最高峰ホテルThe Upper Houseでも腕をふるっていたフィンランド人シェフのEric Räty氏の料理は、フレンチガストロノミーの技術に、主に日本産の食材を組み合わせたもの。北欧×フランス×日本を掛け合わせたイノベーティブで季節感あふれる繊細な料理が楽しめます。
Wine directorのSebastien Allano氏によるワインリストも充実。グラスワインもバラエティに富んでいて、シャンパン(3)、白(5)、赤(4)、スイート(2)、フォーティファイド(2)がオンリスト。
好みの傾向を伝えれば、その日の料理に合わせておすすめしてもらえます($150~$310)。
ディナーのコースは$1,488(6-course)と$1,888(8-course)の2種類とそれなりのお値段ですが、

ランチに合わせたリーズナブルなソムリエセレクションのグラスワイン4種($190~260)の用意もあります。
Chef's Tasting Lunch・$888 four courses
最初に運ばれてくるパンは焼きたてのブリオッシュ。ムース状のふわふわなめらかなバターが2種類。醤油と明太子がそれぞれ混ぜ合わせてあります。これが超絶おいしくて、コース中3度おかわりしてしまいました。
amuse bouche
ごく軽く炭火で焼いたホタルイカのお寿司。赤酢のごはんに新鮮でやわらかなホタルイカ。口に入れた途端にほどけるような絶妙な握り加減。
foie gras
一見しただけではわからないリストラクチャリングされたフォアグラ料理。
XO
自家製XO醤とブラックガーリックのコントラストが楽しい大粒なホタテのソテー。表面はカリッと中はレアで完璧な火入れ。チリオイルがアクセントの濃厚なソースがとてもおいしい。
一緒に提供される一口サイズの桜エビのtempuraはサクサクで香ばしい。
hirame or pigeon or wagyu beef A4
メインは鳩をチョイス。ブルターニュ産鳩の胸肉とモモ肉がそれぞれ別盛で提供されます。
胸肉の皮目は沖縄黒糖と四川山椒でパリパリに、やわらかく弾力のある中はあざやかなロゼ色で、鳩肉らしい野趣あふれる濃厚な味わい。肉の味を引き立てるソースも絶妙。モリーユとマイタケのソテーに、トリュフソースもおいしい。
モモ肉はシンプルに塩で。パリッとした皮にしっとりとやわらかな肉。骨ぎしの旨みがたまりません。小タマネギのピクルスもいいアクセント
chocobushi
シェフパティシエ経験のあるEricシェフの遊び心が発揮された鰹節形のチョコレート。これを削ってアイスクリームにたっぷりトッピング。演出も楽しいデザートです。
madeleine
ほのかな温かみのあるマドレーヌ。バターとハチミツの香りがすてき。
なめらかな舌触りのcrème caramelもおいしいです。
