「欧米人の腸は短く、日本人の腸は長い」「野菜・穀物を多く食べる日本人は腸が長いから胴長短足」という間違った都市伝説は未だに存在しています。
長期間ヨーロッパに居ると日常生活において彼らがたくさんの野菜を食べていることが分かります。また、空から眺めたヨーロッパの土地はどの国も農業立国ではないかと思うくらい農地(牧草地を含む)が広がり、それは日本の農地より比率が高いのではないかと感じます。

この日、トリノ郊外のモンカリエリ (Moncalieri) にある Castello di Moncalieri (モンカリエリ城) https://it.wikipedia.org/wiki/Castello_di_Moncalieri でバラの展示会がありました。ユネスコ世界遺産サヴォイア王家王宮群のひとつであるこの城には、現在 1º Reggimento carabinieri "Piemonte"(第1ピエモンテ・カラビニエリ大隊) が置かれています。

さて、本題です。
イタリアに旅行された方は、ほうれん草、ブロッコリー、インゲン、人参、ジャガイモ、グリーンアスパラガスを召し上がって
『なんでこんなにクタクタに茹でるのだろうか?』と訝しく思われたことでしょう。
私がこちらで調理する時は、日本流に鮮やかな緑と歯応えが残るように茹でていました。孫娘や娘婿から文句は出なかったので「イタリア人は野菜を消化することができないからクタクタに茹でる」という説に疑問を持っていました。実際、サラダ菜、マーシュ、レタス、トマトなどの生野菜サラダを大きなボウルに山のように盛って食べています。
このビストロで食べた Asparagi burro e parmigiano / Asparagi alla bismark は、写真を見てお分かりのように色が褪せるまで茹でられています。これを食べて分かったのですが、野菜は、トロリとした食感であるからこそおいしく、灰汁が抜け、野菜本来の旨みが感じられる "茹で過ぎ" 調理方法の良さを知りました。
【まとめ】
いつも書いているので「シツコイんだよ!」と言われそうですが、「日本に比べ空気が澄み日照の強いヨーロッパの野菜はおいしい。」ということは、香り、旨み、甘み、酸味、そして苦味も強いのです。これを日本の味の薄い野菜と同じように調理すると灰汁が残って苦味が前面に出てしまうのでした。

あまりにもおいしいグリーンアスパラガスでしたので給仕の男性に「Buonissimo! Come cucini?」と尋ねると腰を落として嬉しそうに教えてくれました。

グリーンアスパラガスの上に載っている目玉焼きには塩が振られていません。メニューにも書かれていますが、料理をよく見るとパルミジャーノが使われています。卵の白味がオリーブオイルで焼けた香りとこのパルミジャーノの塩味が絶妙な旨みに昇華し、グリーンアスパラガスを引き立てています。シンプルな料理がおいしいイタリアは、イイなぁ。
