出張でマニラに来てます。フィリピンと聞いてジャングル?僻地?とか連想する人がまだまだ多いかもしれません。しかしここは大都会。そしてフィリピンといえばスペイン。スペイン料理店に連れてきていただきました
サンミゲルのドライは缶提供で寂しかったのでワインにスイッチ。「スペイン産で安くて美味い赤を頼む」とだけ伝えれば、これが出てきました(写真参照)
後は怒涛のバックオーダーが雪崩のようにやって来ました。定番の「エビのアヒージョ」。油が音を立てて泡を発生させてます。石川五右衛門はこの油で釜茹での刑に処せられたのです。徐々に温度が上昇する、なんと残忍な処刑法なのだ…とか考えてしまったことを、同僚はなに見つめてるんだと気持ち悪く思ったことでしょう
そしてこれも定番「イカ墨パエリヤ」。イカ墨の仄かな甘さはサフランより好きです
その他オーダーはお任せしましたが、タパス、よりも豚肉煮込み、ビーフシチューの様なもの、牡蠣のクリーム焼きなど、メインがたくさん。フィリピン的な甘酸っぱさはなく、日本人の私の口にもフィットしました
しかし量が多い。結局食べきれず、お持ち帰りとさせて頂きました
