久方(ひさかた)ぶりの『趙楊』。
東道(あるじ)と御内儀(おかみ)に子女(こども)兩名(ふたり)、
莞忝(につか)とうち笑(え)み、小人(それがし)を歡迎(むかふ)。
懐(なつ)かしき哉(かな)!
通例(つね)のごとく天下無雙(よにならぶものな)き"冷盤(さきづけ)":
次(つ)いで"醉蝦 (ゑはせえび)"。
六匁七分(=25g)の"卷(ま)き"ほどの對蝦(くるまえび)を用(つか)ひ、
黄酒(もろこしのさけ)と白酒(もろこしせうちう)を混合(あ)はせて七日(なぬか)。
そも、"醉蝦 (ゑはせえび)"には大別(おほまかにわけ)て二種(ふたくさ)あり。
一(ひと)つめは、醉(ゑ)ひたるをその儘(まゝ)啖(くら)ふ流儀(やりかた)。
今一(いまひと)つは、これを白灼蝦(ゆでえび)のごとく煮(ゆ)づる做法(やりかた)。
當家(こちら)、前者(まへ)なれど、醉蟹(ゑはせがに)のごとく漬込(つけこ)む。
小人(それがし)杭州(くいしう)にて啖(くら)ひしは、
酒(さけ)の代替(かは)りに醋(す)を用(つか)ふ烹調法(やりかた)。
"隨園食單(ずいゑんしよくたん)"にも、
熱酒(あつきさけ)をかけ、醋醤油(すじやうゆ)に漬(つ)くる做法(やりかた)が、、。
有左程(さるほど)に、
爰(こゝ)で老板(あるじ)趙楊師傅(てうやうおやかた)沈吟(うちあん)ずるは、
「"鱘魚頭骨湯(てふざめとうこつじる)"出(いだ)すを何時(いつ)にするや?」
と云ふ件(ことがら)。
すなはち、貴重(いとたふと)き鱘(てふざめ)の頭骨(とうこつ)に加(くは)へ、
姬茹(アガリクス) 、羊肚菌(あみがさだけ)、松露(しようろ) など、
十三種(とくさあまりみくさ)に及(およ)ぶ蘑菇(きのこ)よりなる、
至高(このうへな)き上湯(よきしる)の饗應(いだ)し方(かた)。
何時(いつ)か?
慈雨(めぐみのあめ)は旱(ひでり)に限定(かぎ)りて成立(なりたつ)もの。
敢(あ)へて"鱘魚頭骨湯(てふざめとうこつじる)"を後半(あと)に囘(まは)すは、
宛然(あたかも)、梅雨季(つゆどき)に長雨(ながあめ)の降(ふ)るがごとし。
鱘(てふざめ)の頭骨(あたまのほね)は軟骨(やはらかきほね)。
清代(しんのみよ)には、
「有鱘魚頭骨美勝燕窩(てふざめのあたまのほねは、つばめのすにもまさる」
と賞賛(ほめたゝ)えられ、貢品(みつぎもの)に列(つら)なれりとぞ。
心靜(こゝろしづ)かにこれを堪能(あぢは)ふに、
その湯(しる)、複雜玄妙(おくふかく、いはくいひがた)き味(あぢはひ)。
長時間(ながら)く燉(に)こまれたる鱘頭骨(てふざめとうこつ)は、
鹿筋(しかのアキレスけん)に髣髴(さもにたり)。
"三大菌排翅(みくさきのことふかひれにこみ)":
すなはち、
鵞蛋菌(がてうたまごだけ)、牛肝菌(やまどりだけ)、虎掌菌(こしやうだけ)に、
排翅(ふかのまるびれ)を燉(ゆるりに)こみたるもの。
奶湯(ちゝのごときしる)を髣髴(おもは)す白色(しろ)く濃厚(こ)き湯(しる)。
その味道(あぢはひ)は、丸(まろ)みを帶(お)び究極(このうへな)き美味(うま)さ。
排翅(ふかひれ)の齒應(はごた)へも適度(ほどよ)く、
實(げ)に、「この宵(よひ)の白眉(はくび)」。
「正宗(ほんばもの)」とも呼(よ)ぶべき"松露囘鍋肉(しやうろくわいくわにく)":
五花肉(ばらにく)の塊(かたまり)に火(ひ)を通(とほ)し、
冷却(さ)ましたる後(のち)、いみじう薄(うす)く削(そ)ぐ。
これを「囘鍋(なべにもど)」し、蒜苗(めorはにんにく)?と炒(いた)め合(あ)はす。
大蒜(おほひる)固有(ならでは)の馨(かをり)希薄(うす)く、
外見(みため)も淺葱(あさつき)に似(に)る。
豆瓣辣酱(たうがらしそらまめみそ)と松露(しようろ)に油(あぶら)が加(くは)ゝり、
得(え)も言(ゆ)はれぬ風味(あぢとかをり)。
"鵞蛋菌魷魚(がてうたまごだけとするめのにこみ)":
海(うみ)より遠(とほ)き蜀(しせん)。
生(なま)の北魷(するめいか)を入手困難(てにいれがた)く、
往古(いにしへ)より乾魷魚(ほしたるするめ)を用(つか)ふが尋常(つね)。
味(あぢ)の濃厚(こ)さでは、
本朝(わがくに)が魷魚絲(するめ)齧(かぢ)るが優(まさ)れど、
蜀(しせん)では貴重(たふと)き乾貨(ひもの)。
"鵞蛋菌(がてうたまごだけ)"は誕生以來(うまれてよりこのかた)これが初(はじめて)。
これにて、
意(わがこゝろ)、半(なか)ば、「酒足飯飽(ごちさうになりまうしてござる)」。
一櫡(ひとはし)着(つ)くるや、
須臾(たちまち)、周圍(まはり)に佐(たす)けを乞(こ)ふと云ふ爲體(てゐたらく)。
"香辣川絲鴨(うしにくとしせんあひるにくせんぎりのきのこいため)"と云ふは、
四川(しせん)の燻鴨(いぶしあひる)と牛肉(うしにく)に、
牛肝菌(やまどりだけ)、猿頭(やまぶしたけ)、姬茹(アガリクス)、笋(たけのこ)を、
絲(せんぎり)とし、花椒風味(かほくざんせうのかをり)もて炒(いた)めたるもの。
菜譜(しながき)になき"松茸明蝦(まつたけとえびのしせんふういためもの)":
烹調(つくりかた)は"宮保(ぐうほ)"と思(おぼ)しき做法(やりかた)。
"宮保(ぐうほ)"と喚做(よびな)すは、魯(さんとう)に源流(みなもと)あれど、
今(いま)や、「四川名菜(しせんめいさい)」とも云ふべき現状(ありさま)。
"白茹海參雞(しろきのこときんこにはとりにこみ)":
"白茹(まぼろしのしろきのこ)"、すなはち"雞腿菇(さゝくれひとよだけ)"は
吐蕃(チベット)石渠縣(せきゝよけん)、
海拔一千五百丈(うみより≒4500m)の高山(たかきやま)に生育(そだつ)とぞ。
海參(きんこ)、鹿筋(しかのアキレスけん)、魚唇(さめのくちびる)入(い)り。
勿論(いふまでもなく)、この三品(みしな)は貴重(たふた)き乾貨(ひもの)。
魚唇(さめのくちびる)は稀少(めづらし)き鯨鯊(じんべいざめ)とのよし。
滿腹(はらふく)れ、その味道(あぢ)、審(つまびらか)ならず。
牛肝菌(やまどりだけ) 、猿頭(やまぶしたけ) 、竹蓀(きぬがさだけ)。
三種(みくさ)の珍菌(まれなるきのこ)を用(つか)ふ、
"珍菌燴蘿蔔(みくさのきのことすゞしろにこみ)":
竹蓀(きぬがさだけ)は傘(かさ)の部分(ところ)を燴(に)こむ。
"香茹松茸豆腐(とうふのしいたけにくもどきまつたけあん)":
香茹(しいたけ)を猪肉(ぶたにく)に擬(なぞら)へ餡(あん)と爲(な)す。
豆腐(とうふ)は自家製(てづからこしらへたるもの)。
味(あぢ)、不詳(つまびらかならず)。
"山菌牛肉麪(やまのきのことうしにくのそばきり)":
外見(みため)、"擔擔麪(しるのなきしせんやたいそば)"に瓜兩個(うりふたつ)。
蘑菇(きのこ)は、白靈茸(あわびだけ)、虎掌菌(こしやうだけ)とのよし。
これまた、その味(あぢ)を不知(しらず)。
最後(いやはて)の甜點心(あまきもの)として、
"松露甜燒白(しようろもちごめとぶたばらのくわし)"を貰(もら)ふ。
松露(しようろ)、五花肉(ぶたばら)、糯米(もちごめ)、豆沙(あづきあん)。
實言(まこと)、能(よ)く鹹(しほからみ)と甜(あまみ)が協調(たすけあふ)。

およそ"雪域山珍鹿角菜(ゆきやまろつかくさい)"なるもの、
高(たか)き雪山(ゆきやま)、淡水中(たんすいちゆう)に生(しやう)ず。
先(さき)が割(わ)れ、その姿(すがた)、鹿角(しかづの)に彷彿(にたり)。
これを清湯(すましゞる)にせしものこそ、"雪域山珍湯(ゆきやまろつかくさいじる)"。
高名(なだか)き宣威火腿(=雲南火腿、うんなんはむ)など、
嚴選素材(よくえらみしゝな)を用(つか)ひ、ゆるり引(ひ)きたる上湯(よきしる)。
東道(あるじ)趙楊(ちやうやう)に據(よ)らば、
「宣腿(せんたい)は金腿(きんたい)に雋(まさ)る。」
蜀(しよく)より拿囘(もちかへ)りたる"白松露(しろとりゆふ)"、竝(なみ)にあらず。
強烈(つよ)く芳香(かぐはしきかをり)、
四方(よも)に漂(たゞよ)ひ鼻竅(はな)を穿(うが)つ。
これを前(まへ)には、"松露(しようろ)"と云へど、なほ、馨(かをり)なきがごとし。
"蟲草花 (とうちゆうかさうばな)"と喚做(よびな)すは、
"冬蟲夏草(とうちゆうかさう)"と同(おな)じ菌類(きんるい)なれど、
その容姿(すがたかたち)は"冬蟲夏草(とうちゆうかさう)"と大異(おほいにことなる)。
これもまた高貴(たふた)き中藥(くすり)の一(ひとつ)。
琵琶湖産(びはこの)三斤(さんきん)近(ちか)き甲魚(すつぽん)。
他店(よそ)の厨師(いたまへ)とは思想(かんがへ)を異(こと)にし、
「これほどの大(おほ)きさならねば、佳味(よきあぢ)たりえず!」
と、力説(ちからをこめてとく)。
"覇王花椒魚(さぼてんのはなにうをのさんせうあぢ)" :
覇王花(さぼてんのはな)は初(はじめて)。
竹蓀(きぬがさだけ)と思(おぼ)しきものを問ふに、應答(いらへ)て曰(いは)く、
「竹蓀(きぬがさだけ)の蛋(たまご)の胎盤(たいばん)?」とのよし。

此度(こだみ)の宴會(うたげ)は"河魚(かはうを)盡(づ)くし"。
鯉魚(リーユイ、こひ)、鯽魚(ジーユイ、ふな)、鯰魚(ニェンユイ、なまづ)、
草魚(ツァオユイ、さうぎよ)、鰻魚(マンユイ、うなぎ)、生魚(シェンユイ、らいぎよ)、と、
枚舉(かぞふる)に遑(いとま)なし。
過半(あらかた)西土(もろこし)渡來(わたり)の産(もの)なれど、
鰻魚(うなぎ)と香魚(あゆ)ばかりは扶桑(わがくに)の産(もの)と云ふ。
鰉魚(ファンユイ、てふざめ)鱖魚(ジェーユイ、けつぎよ)は無理(むり)にせよ、
鱔魚(シャンユイ、たうなぎ)缺(か)くは寂(さび)しきところ。
この夜(よ)の菜譜(こんだて)は、如下(つぎのとほり)。
・十二單碟(とさらあまりふたさらのさきづけ)
・清湯魚漿(かはうをすりみのすましゞる)
・豆腐鯽魚(ふなどうふ)
・香辣鰻魚(からみうなぎ)
・軟烤鮎魚(あゆのとろびあぶり)
・大蒜鯰魚(なまづにんにく)
・糖醋鯉魚(こひのあげものあまずあん)
・宋嫂湯麪(さうさうしるめん)
・三色涼糕(みいろのもちぐわし)
倩(つらつら)"十二單碟(とさらあまりふたさらのさきづけ)"を瞻(み)るに、
通常(つね)と異(こと)なり、河魚(かはうを)が主體(おも)。
濃(こ)きに過(す)ぎず、淡(あは)きに流(なが)るゝこともなし。
實(げ)に、「佳菜(よきしな)の數々(かずかず)」と云ふべきか。
およそ、舖(みせ)の格(かく)、厨師(いたまへ)の技倆(うで)を窺(うかゞ)ふに、
湯(しる)を吟味(み)るに如(し)くはなし。
この日(ひ)の"清湯魚漿(かはうをすりみのすましゞる)"も、
尋常(つね)に變(か)はることのなき美味(よきあぢ)。
"麻婆豆腐(しせんからみどうふ)"を髣髴(おもは)す"豆腐鯽魚(ふなどうふ)"。
老板(あるじ)胸(むね)張(は)りて曰(いへら)く、
「脂(あぶら)多(おほ)き海魚(うみのうを)は清蒸(むしもの)が適(よ)く、
鯽魚(ふな)ゝど河魚(かはうを)はかくのごとき烹調法(やりかた)が吉(よい)」と。
小人(それがし)、杭州(かうしう)、北京(ほくけい)にて、
河魚(かはうを)の清蒸●魚(むしうを)啖(くら)ひし例(ためし)あり。
寔(まこと)に佳味(よきあぢ)なりしかど、
老板(あるじ)趙楊(てうやう)が作法(やりかた)にも一理(ことわり)あるは慥(たしか)。
本朝(わがくに)で"香魚(あゆ)"と云ふは、
その芳香(かをり)と苦味(にがみ)を愉(たの)しむもの。
一方(かたや)、この日(ひ)の"軟烤鮎魚(あゆのとろびあぶり)"には、
勿驚(おどろくなかれ)、牛酪(バター)と羊油(ひつぢあぶら)を用(つか)ふ。
幼少(いとけなき)以來(よりこのかた)、
吾儕(わなみ)に馴染(なじ)みの深(ふか)き"糖醋鯉魚(こひのあげものあまずあん)"。
想定外(おもひのほか)に、糖(さたう)・醋(す)ともに穩(おだ)やかにして、
滋味(やさしきあぢはひ)深(ふか)し。
扨(さて)、"宋嫂湯麪(ソンサオタンミェン、さうのあによめしるめん)"。
南宋(なんさう)の名菜(なだかきれうり)、
"宋嫂魚羹(ソンサオユイガン、さうのあによめじる)"に由來(ちな)むは明白(あきらか)。
八百年(やもゝとせ)の歴史(れきし)を誇(ほこ)る。
宋高宗趙構(さうのかうさうてうかう)西湖(せいこ)に遊(あそ)びたまひし折(をり)、
宋五嫂(さうごさう)なる魚羹(うをのあつもの)賈(う)る姥(うば)ありき。
高宗(かうさう)この魚羹(あつもの)を甚(いた)く滿悦(おきにめ)したまひ、
老女(おみな)に金銀(こがねしろかね)絹(きぬ)を賜(たま)ひしとぞ。
醋(す)を主(おも)なる佐料(てうみれう)とし、
生姜(はじかみ)、大蒜(おほひる)、糖(さたう)、鹽(しほ)を加(くは)へ、
新(あらた)なる味(あぢはひ)となしき。
"宋嫂湯麪(ソンサオタンミェン)"が酸辣(さんみとからみ)、尤(はなはだ)強(つよ)し。
最後(いやはて)の"三色涼糕(みいろのもちぐわし)"。
元來(もとより)、"三色涼糕(サンセーリャンガオ)"と喚做(よびな)すは、
糯米(もちごめ)に、豆沙(あづき)など三種(みくさ)三色(みいろ)の餡(あん)に、
白糖(しろざたう)などを合(あは)せて製造(つくる)。
河魚(かはうを)用(つか)ひて安排(あんばい)せしが當家(こちら)の品(しな)。
つぶさに檢(あらた)むれど、
年糕(もち)と紅豆(あづき)のほか、色(いろ)と叫(よ)ぶべきものを見(み)ず。
ともあれ、尤(いと)も愉快(たのし)き宴會(うたげ)なりしは勿論(いふもさらなり) 。

唐山三大惡女(もろこしみたりのおぞましきをんな)の一(ひとり)として、
漢(かん)の"呂雉(りよち)"、清(しん)の"西太后(せいたいごう)"に竝(なら)ぶ。
"呂雉(りよち)"と云ふはかの漢高祖(かんのかうそ)劉邦(りうはう)が夫人(おくがた)。
"武則天"、皇后(きさき)となるや、前皇后(さきつきさき)を打擲(うちす)へたる後(のち)、
四肢(てあし)をば"ばらりんずん"と切斷(きりきざ)み、
生(い)きながらに酒壺(さかつぼ)に抛(はふ)り込(こ)みしは遍(あまね)く知(し)らる。
前后(さきつきさき)喚叫(をめきさけ)びつ絶命(いきた)へしとなむ。
嗚呼(あゝ)、語(かた)るも泪(なみだ)の故事(はなし)に因(ちな)む宴會(うたげ)。

と云ふは眞赤(まつか)な虚談(うそ)にて、
"武則天(ぶそくてん)"嗜(この)みし罐子(つぼ)と云ふ意(こゝろ)とぞ。
小壜子(ちいさなつぼ)に、豬(ぶた)の排骨(あばらぼね)、肉丸子(にくだんご)、
泡菜(パオツァイ)、冬菜(ドンツァイ)などを加(くは)へ、
蓋(ふた)の隙間(すきま)を塞(めばり)して燉(とろとろにこむ)こと、
西洋時辰儀(せいやうどけい)にして大約(およそ)十六時間(じふとろくじかん)。
