☆親方の素材や料理方法への好奇心、探求心がいつも感じられる
☆種類多くとも、1つ1つ量もしっかり。
☆季節の魚もいいが、野菜と果物の味の良さに感動、
油を使った料理もあり、肉がなくても飽きない
☆お酒がすすむ・・飲みすぎ注意
☆氷の煙・食用花や葉等の華やかな飾りはないが、充実した素材、料理、水も大き目のグラスに
冬の足元は暖かく。食器も渋い雰囲気のもので、女性の方の予定席のコースターは色をさりげなく変えてあったりする。
☆人気が出られて、内装の電灯や飾られた絵画なども、渋く良い感じのものだ
☆大将が穏やかながらも時折眼光がしっかりしていらして、説明も伺えば過不足なく静かに応えてくださる。店や料理全体にも、人柄が表れているようだ。
☆★下町の寿司店、飾り気がないので、人やシチュエーションによっては好みがあるだろう。
☆★寿司より前半の料理が印象深いと感じる 洋の味が出ることも 寿司屋、と思わず伺いたい。
今まで伺った分、すべてをレビューしてはいない。しかしいつ伺ってもほっとする。たまにはレビューさせていただく。こちらの魅力は親方の素材や料理への情熱である。ポーズをつけて派手に見せるのではなく、黙々と調理するだけ。劇場型テーマパーク的な出し方が好きな方には、物足りなく落ち着かないかもしれないけれども、作り方を変えてみたり、洋の調理を取り入れてみたり、探求はつきない。ちょっと料理に目を落として、それについて考えてみるのも楽しいものだ。久しぶりに伺っても、色あせない魅力がある。
この日はカウンター貸し切りながらもコロナが不安なので、心配性の私だけひとり、奥のテーブルにしていただいた。
この日はふぐの食べ比べ。最後のデザートはフレッシュな金柑ジュレに軽やかながらもカカオ感あふれるチョコの水菓子パフェ、下手なカフェのデザートなどより遥かに美味で驚いた。
ふぐをいろいろな食べ方で。
途中、ベルモットとタイの出汁、エシャレットにしいたけ、山ウドを混ぜ込んだフライのソースが秀逸に思えた。一応、和の親方だが、探求心は尽きない方である。コクや酸味、甘みがほどよく、実にワインが飲みたくなった。
柚子とだいだいを使ったポン酢も、酸味はしっかりあるがとがらず、出汁と醤油のまろやかさあふれる。
大分と大原(千葉)のフグ、並べて頂くと確かに違いを感じる。軍配はあげず。食感の違いや食べ方でのふぐの魅力を改めて感じる。まあ、私はフグなど、滅多に頂かないのだけれども。以下メニュー
