気負いコチコチだった日々が過ぎ...
銀座金春/寿司屋通り
此方などは銀座の中でも築地に極めて至近、
全国の拘り鮨屋さんがウラヤマシイ~!
だから、この手の鮨屋は営業しやすい?
拘りにこだわる、走り、旬の魚は必ず手に入るはず...
辛辣な云い様だが、やはり食事としての幹が不足!
鮨を肴にするのならそれは良しとしても
やはり肴ではなく晩餐...
晩餐伊なりきれるか否か!
ここらが鮨の限界なのです、
鮨本来は、5巻2本の「ちゃんちき」が
握鮨の基本ですから...
偶然同席の作家Iさんは、完全に肴にする鮨でした!

最近、やはり銀座だ~!と
意気揚々で乗り込んでくる新店鮨屋さんが
銀座では増えてます。
そんな中では一番、水谷さんも負け!!
銀座は鮨の聖地、メッカ。
新店開業の中でも店主の才が輝きを放つ
店主は桑野達也さん
10年ほど赤坂「布扇」のつけ場後に独立とか・・・
いつの日か銀座で・・・
こちらのスタンダードは、あくまで伝統。
小さ過ぎでもなく、大き過ぎでもなくの握の極意、
その師は赤坂「き久好」の清水喜久男氏はじめ多々とか。
炊白板昆布載せ鯖、千枚漬包一子
2種類の煮切の使い分け、
柚子なども数種用意など、
繊細な拘りが元々和食で修行した差別化でしょうか!
さて、6月も間近
くわ野さんでは「新子」をどうあしらうのか
楽しみにしていいと思います。
