出遅れたレビューです・・。
北九州レビュアーさんと山口レビュアーさん達と「関門対決、決戦の会」を結構。各土地でどちらが素晴らしいお店を紹介出来るのか・・と言う志向。
後手の、山口側が出してきたのは、こちらのお店です。
(ちなみに先手北九州側は、門司港 ポルトーネ)
お店は、大正10年、築約100年の純和風を改築。石の階段をのぼると庭園があります。
古き良き時代を感じる荘厳な面持ち、上品で高級感が漂います。
店内に入ると、お靴を脱がずそのまま2階のメインダイニングへ。品格もありながら木の温もりを感じます。
カトラリーがすでにセットしていて、お皿には、各レビュアー様達の名前入りの御挨拶状が立てていて、これは感動しました・・。
お料理開始前に、お店の方から店内を案内されました。
まずは、貴賓室。伊東博文が書いたという書も飾られています。テーブルと刺繍を施した椅子が高級感溢れてます。
別棟の酒蔵。木造ですが温度も調節され、高級な日本酒・焼酎、ワイン達が眠ってました。
さて、そろそろお時間となり着席です。
今回は、シェフのお任せコース ワンドリンク付き。ビールをチョイス!
まずは、乾杯でスタートp(^^)q
アミューズ・ブーシュ
「フランス産カナールのスモークとラタトイユ」「三瀬鶏の昆布締めとザーサイのタルタル」
鴨肉は燻煙香、しっかりとした弾力が印象的。三瀬鶏は、クリスタル岩塩にて漬け込んで、羅臼昆布で締めた手の込んだものです。
アントレ
「仙崎産太刀魚のマリネと完熟トマトのゼリー寄せ」「樺太マスの低温調理きのことトマトのディクセルを乗せて」
低温調理法の旬の樺太マスは旨みがしっかり閉じ込められいて、地元契約農家から直送のキャベツで作ったムースは言葉がいらない程の美味しさ。
スープ
「南瓜の冷たいスープとコンソメゼリー」
甘味をしっかり感じられるポタージュの上に、ジェル状のコンソメスープがちりばめられています
御口直し
「バジル風味のソルベと白ワインのグラニテ」
ヴィヤンド
「宮崎牛とフォアグラのソテーオニオンとシェリービネガー風味のソース」
デザート
「ズコットとルバーブのソルベヌガーとコンフィを添えて」
最後にコーヒーか紅茶。
コース中にはバケットがありました。
今回も、素晴らしい空間にて美味しいお料理に、本当に大満喫しました。
