大阪でのグルメ師匠にアテンドしていだき、お邪魔しました。
ここのご主人は、その昔は、福島区の「聖護院」にもいらっしゃったことがおありとのこと。
宴会で普段からヘビーユースしている私にはなんだかとっても身近だわ♪ (と、勝手に思った私です。。。)
この日いただいたのは、8,000円のコース。
内容は以下になります。

宮崎の「南の島豚」を酒粕で漬け込んだものをお吸い物で
岡山の生黒胡椒添え

松茸の丹波焼き、つくねいもを使った菊花の餡かけ、栗のけずり節を添えて
■握り鮨
①あわび肝と青のりをあわせたシャリに、筋子&愛媛の赤雲丹をのせて
②かます昆布じめの炙り
③北海道 まぐろ赤身、玉子黄身のヅケのせ
④煮穴子
■お椀②
”仲秋の名月”をイメージしたお椀。
すっぽんの玉子豆腐仕立て⇒月
白きくらげ&九条ねぎ⇒大地
■焼物②
鰆の塩焼き、茄子の焼きびたしを 松茸&お酢のソースで
■炊き合わせ
白ずいき、小芋、すくな南京を豆乳で作った白和えソースで
■蒸しものになるのかな?
くえ(鶏肉のようなしっかりテクスチャーに、これでもかのすごい弾力でした!)

もぉ、感動です!
なにせ、途中に握りも食べれちゃうわけですから♪
そして、この握りがイイ塩梅なんです(*^-^*)
旬の魚介と、旬の野菜を、しっかり目で楽しめて、舌で堪能できて・・・
一瞬にしてトリコです♪
最後のちらし鮨→デザート なんぞは、感動というか驚きの流れですね♪
その発想にも感服です。
絶対定期的にお邪魔したいお店です。
