三心さん夏の陣。
夏は何月にお伺いしようかと考えてましたが、新子はなんとかたべたいとしても、
何より食材全般が弱くなるこの時期にどのようなタネを石渕さんなりに提供して
くれるかという興味がビンビンで、祇園祭終わり位(超適当)を目途にお伺い。
今回は、頂いたメニュー写真欄に記載しましたが、それを読んどけというような
雑な投げ方は致しません笑それくらい素晴らしかった。
2023年7月の献立は以下です。
□噴火湾産の毛ガニの酢の物 ◎
毛ガニに限らず、噴火湾産って今ではすっかり超のつくブランドですよね。
実際おいしいですが、そんなことをいいたいのではなくて、一工夫もふた工夫も。
酢の物だけど、酸味は三杯酢ではなく、冷凍したトマトをシャーベット状に。
毛蟹は鮮度がいいのでクセがないです。個人的には、カニが好きな人ってあの
蟹臭さがらしいという人がいるので、そのクセのなさを補うためにウニとあえてると
すればそれはもはやマジシャンだと思いましたが、実際はそんなことはないでしょう笑
のっけからすごすぎ。
□明石の蛸の煮物 ◎
これ自体は普通ですけど、食べると食感が想像と違います。
これも驚きましたが、蛸もナマコも大量の塩をぬりこんでもみもみしてぬめりをとりますよね。
それは定石どころかそうしないと食べられないくらいの認識。
大将曰く、塩もみはしていないそう・・・。あ、そうですか、だからこの食感なんですね・・・
とはいえ、どれだけこの一品に手間かけてはるねん問題笑
□伝介穴子の焼物 超◎
伝介穴子って大ぶりな穴子ですけど、基本大味っていうイメージですよね。
焼けばいいってもんじゃないのになって思うんだけど、大将曰くアプローチを変えたと。
水分を極力抜いて味を凝縮させたんだと。穴子を扱うプロのお鮨屋さんの発想と真逆笑
シャリと合わせて旨い!!!
□握り 超特◎
握りに関していうと、行くたびに美味しくなってるというほかないです。
シャリも明確に違うとは思わないけど、例えば前回頂いたイカの握りと印象が違うんですよ。
今回でいうと、少し塩味が強いのかなという印象があったり、ただほどけに関していえば
確実に進化していたり。
そんなことは食べていただくしかわからないとして、他のお鮨屋さんにない攻めの握りが
ありました。石渕大将もおっしゃってましたが笑。鮎とハモ。
□鮎の握り 超特◎+
鮎を刺身であるいは洗いでというのはまあ、百歩譲って奇をてらった京都の料理屋さん
であるかもしれません。普通はお鮨屋さんであっても焼きで出さはりますよね。
鮎を焼きを食べる場合の蓼酢と内臓のうるかを鮨にして。賛否はあると思いますが、
これを堂々と出せる大将の力量にあっぱれ。
□鱧の握り 超絶◎+
関西のお鮨屋さんだから、鱧は当然出てくるし、韓国産というのも価格帯的には
客層的にも想定できる。ただ、お仕事見てると、骨きりしながら、めっちゃ薄く
きってはる、どないやねんと思います笑
が、こんな鱧の食べ方もあるんやなとしか言いようがないです。旨いし、旨すぎ!
京都のお友達の和食の職人さんたち、これはすごいですよ。
こんな感じで、新子の印象がぶっ飛んでしまうくらいの衝撃のお店です。
お酒に関しても、相変わらず大将の統制といえば聞こえ悪いけど、大将の鮨との相性
から逸脱しないようなお酒が揃っているし、ワインも含めてこちらのお鮨とお酒と
の可能性という点についてはすばらしいの一言です。
もっといえば、個人的にお店の雰囲気、大将のお人柄、お弟子さんへの接し方、
それ以外も全部好きなんですけど、それを一切無視したとして、もっともっと
いうとお金がかからない状況だったとして、こちらのお店で飲食してみてください。
飲食店されてる方がいかに考え、努力されているかということが分かるはずです。
