オープンしたばかりのこちらへ伺いました。
店主の瀧口氏は、鶴の家の料理長、東京新聞の連載を7年・・・など経歴をお持ちだとか。
お店の場所はちょうど銀座久兵衛本店の裏あたり。
地下の店内は清潔なカウンター8席に個室のテーブルが1つくらい。

アルコールは福島の飛露喜(ひろき)などをいただきました。
料理は少しずつですが、豊富なレパートリーとキャリアを感じます。
とくに和の命ともいえるダシは、関西の水を使っているかと思うほど素晴らしい味わいでした。
芋茎(ズイキ)は関西の経験が生きています。
春菊の茶碗蒸しは香りもよく色も鮮やか。
関西風の自然な味付けが中心で、これなら食通さんにもオススメできます。
ちょっとリッチな夕食に、また接待などにも重宝するでしょう。
銀座では真っ当な店だと思います。
