2017年12月,新多久の山貝料理長に行くべきお店と言われ,やっと予約が取れて初めて古門の暖簾をくぐった.小さなお店でカウンターの料理長の目の前に通された.
名古屋の萬乗醸造の火と月の間にのぬる燗で乾杯した.初めに出されのは,血振りナマコの霙酢和え.ナマコってこんなに美味しい食物だったとは.添えられた自家製の唐墨も日本酒に合ってどんどんお酒が進みます.
次に出された柿の白和えは非常に美味しく,白和えの上手な作り方を聞いたら,親方から丁寧に教えて頂いてしまった.ありがたい.
次にいただいたのは,生ハムと白菜の煮浸しに牛タンの柔らか煮.生ハムなんて使うんだと驚きました.牛タンは柔らかく優しい味でした.
吸い物椀が出されて,鼻の前でそっと蓋を開けると柚子と帆立の香が広がりました.真っ白な帆立と湯葉の真薯が浮かび,真っ赤な人参と青菜と黄色い柚子と彩も美しい.
お造りはなんと3皿,どれも丁寧な仕事がされているのが伺える.この料理人はただ者では無い.
里芋の女蟹餡かけをいただく.カニの風味に里芋のねっとり感とうまみが口中に広がる.箸で頑張って餡を一滴も残さず頂きました.
焼き物は,甘鯛の酒焼と子持ち鮎,慈姑チップスと銀杏が添えられ,緑のお皿に色鮮やかに盛られていました.色を美しく味も最高でした.福井の黒龍の純吟をちびちびやりながら最高の肴でした.
次に運ばれてきたのは,熱々の小鍋.鍋料理かと思って開けたら驚きのグラタンでした.鮑と肝のそれは美味しいグラタンで,日本料理の親方がこのような洋風なものを作ることに驚いたし,またそれが恐ろしく美味しくて2度驚きました.木のスプーンで丁寧に残さずいただきました.
最後のお食事で,これまた驚きのトリュフと卵の餡かけご飯が出されました.トリュフの香に包まれて,和風の出汁が絶妙で美味しい過ぎます.ここまで味をコントロールできたらどんなに楽しいのだろうかと羨ましい限りです.
甘味は,黒ゴマプリンと果物で,最後まで美味しく頂きました.
お皿から盛り付け,味はもちろん料理のレパートリーから接客まで,余裕が感じられて,誰を連れて行っても間違いなしのお店でした.
