招待して頂き訪問しました。
初訪問且つ招待でしたので、
飲み物、食べ物全てお任せでお願い致しましたが、
魚、肉、パスタ、そして各種ワインどれを頂いても、
他では味わえない味付けにて脱帽でした。
始めに頂いたカワハギのカルパッチョは、
ソースが丁寧に裏ごしされたカワハギの肝ソース、
苦みと旨みのソースで、カワハギ本体の味を引き立てます。
タヤリン(私は初めての言葉:濃厚なパスタみたいなもの)と共に登場した、
この時期のオススメという白トリュフは
まず、透明な蓋をされた状態で姿のまま登場。
そして蓋を開けるとその芳醇な香りをまず楽しめます。
そして目の前でスライス。
スライスしたてのトリュフをこんなに頂いたのは初めてのこと。
他で頂く少量のトリュフでは味わえません。
短角牛のローストは
赤身肉の部分がしっかり肉質を感じられながら、くどすぎず
余計な味付けではなく肉そのものの味が美味しく、まさに味わうお肉でした。
春菊のペペロンチーノは、
春菊をすき焼きの付け合わせでしか頂いたこと無かったので、
斬新な香りと味わい深い苦みが印象的でした。
それぞれの料理に合ったワインをソムリエがチョイスして頂けるのも
嬉しいところ。
そんなこんなで贅沢な時間を過ごさせて頂きました。
また伺う機会があれば思う存分堪能したいと思います。
