ミシュランで二つ星を獲得されてから、その後レビューを書けていなくて。
情報修正も兼ねて、書いてます。
2019の特別版、北九州市には三つ星がなく二つ星が2軒のみ。
その1軒がこちらでした。
伝統と創意を織り交ぜた懐石料理は、炭火で焼く品が多め。
見える場所で焼かれ、風情を感じます。
造りは、地場で揚がった白身魚を出され、醤油がわりに塩昆布を添える先駆け店。
同じように出される店を見かけるようにはなりましたが、こちらは一味違います。
冬から春へと、季節の変わり目にお伺いした時の内容です。
平日の夜に予約訪問しました。
本日は、広い方のフロアの席が用意されていました。
寒い時期のブランケットの配慮は昔から。
今はカウンター下にパネルヒーティングがあり寒い日も環境バッチリ。
あたたかいおしぼりは淡い香りが心地いい。
飲物メニューに目を通し、モエ・エ・シャンドンを1本。
バカラのグラスで。
◆おまかせ 25000円
・蛤の玉締め…大きな蛤を1個そのまま。調味料を使ってない天然の優しい旨味。
・キヌ貝…生干しを見せて貰って炭火焼き。菜花を添え。嗚呼、良い香り。
・数の子…アテ的に小皿で。
・海鼠
・造り…天然とらふぐ。塩昆布とポン酢。他が真似てもひと味違う。
・白子…目の前で炭火焼に。
・椀…越前蟹、蟹味噌。かぶら。輪島 流水の漆器で。
・うにく…鹿児島牛3枚にカット。若松の海胆。新玉のソース添え。
・焼き餅…ふきのとう餅。本日唐墨は別の形で。どうぞ熱いうちにと。
・とまと…若松産。2~3月が良い、暑くなると味が落ちるとか。
・からすみ大根…聖護院大根、からすみ。
・土鍋炊きごはん…火で温められた茶碗。金継ぎもされてる。粋で良いです(^^
煮えばなから少量づつ供して貰える。最後はおこげで計4杯いただく。
香の物、銀鱈、唐墨ジャコが最高! 焙じ茶。

1本空けたあとは、佐藤特製竹酒2合を。
寒北斗純米を冷蔵庫で2日寝かせたもの。
本日も満足でした。
店主の佐藤好美さん。抜群のセンスだと思う。
繊細でサバサバされてて、奥深い方。
私の大好きな二品が商品となっていて、購入出来たので買って帰りました。
この日は、からすみ餅がコースで出なかったので家にて♡
唐墨を射込んだ名物もち。バランスがやたらと良い。
常温に戻してトースターで焼くだけ。素人が焼いても美味しい。
ご飯のおともにと、幸せになれる佐藤のもう一つの名物、からすみじゃこも購入。

母の日は、これ送ろうかしら…
おまかせコース価格は、世の中全体に大きく上がっているので良心的に感じます。
2011年頃から、お付き合いのある店。
13年って大きいですね、世の中の環境が大きく変わりました。
それでも「旨い」感覚に変わりなし。
当時から佐藤さんが言われていたこと、そこは変わらない。
美味是唯淡。淡いことに旨さがある。手を加えるだけが料理ではない。
といって、素材ばかりに頼るのでもない。
四季折々の旬の食材をこだわりをもって選びその旨味を最大限に生かしてやる。
ほんとうに旨いといえるものだけを、
ほんとうに旨いと感じてくれる人のためにつくりつづける店でありたい。
