四度目?の札幌
今までは蟹やうになどにかまけて余りすし屋に行ってない
今回は3泊なので1度は鮨を食いたいものだ
どうせ行くなら名店がよいがすすきのはちょっと
ってことで街はずれにあるミシュラン三ツ星のこちらを予約
駅周辺のホテルから歩いて向かったが結構距離が有った
カウンターのみで7席程度の小箱
カウンターの前には常に大将と助手が一人
助手の方は途中で交代していた
鮨屋のカウンターは大将の人柄で雰囲気が決まる
高級店でも居心地が悪いこともしばしばだ
スマートで柔和さの中に一本通った芯を感じる大将
スタッフも節度を保ちながら人あたりのいい接客
とても居心地の良いカウンターであった
つまみは鮨屋のつまみの範疇ではあるが
ひと手間ひと捻りが加えてあり楽しめた
寿司ネタもいずれも水準以上のネタで
固めの舎利や程よい握り具合も好み
コースのみの店なのに金目や赤貝など
追加できるネタが残っていたのは嬉しかった
贅沢を言えば平均点はとても高いが
突出したネタが見当たらなかったことくらいか
コース16000円 3~4貫追加して
ほどほどに飲んで 20000円台前半のお会計
街はずれということも有るのだろうが
大都市の高級店としては割安な印象
帰りにふと思った
嗚呼 これは北海道の鮨じゃなかったな
ネタも地のものはほとんどなく
鱒以外はどこでもおなじみのもの
鯵はトレンドの『出水の鯵』だったし
東京の名店よろしく全国から良いネタを集めているようだ
全国共通の江戸前スタイル高級店であり
北海道のネタ・北海道の鮨を食べられるお店ではなかった
それでも十分満足して店を出た
札幌で美味しい江戸前寿司を
気持ちよくリーズナブルに楽しめる店
そんなお店を探している方にはぴったりの店だと思う
