太平寿しはまだ行った事がないが、そこで修業した方のお店に伺う事になった。
石川県でもトップクラスのお鮨のお店との友人の見立てで伺う事のなったが感想は
誠実で堅実で安くて(とは言え高級な鮨屋の中では安いと言うだけで平均的なお寿司のお店よりは高く何より回転寿し(チェーン店なども)とは比べてはいけない)あくまで本格的なお鮨お店の中ではと言う事です。

別途頼みたい場合はそれなりのお値段を取るかもしれないがそれでも激烈に高いという事はないと思う。
感想はどれも江戸前とはちょっと違う確りした手仕事が施され、幼い頃に親指の怪我をしてハンデがあるとはとても思えないご主人の誠実な握りとカウンター越しに話すご主人の人柄が素晴らしい事に感動した次第です。
石川県内の方はもちろん東京に行かないような鮨ネタを良い形でなおかつそれほど高く無く(あくまで高級な鮨店としては)食べれるお店としては非常に優秀なのかと思います。
味の観点からは前に行ったすし処 めくみの方が上かと思うがあちらは昼は安いが夜は東京並みの値段がするのでこちらでも良いのかな
感想は酢飯は酢の加減、ほぐれ度合い、ネタとのバランスは非常に良いと思う。個人的に柔らかく煮込んだたことしろえびとあまえびとあかいかがドンピシャ
