前菜、前菜、スープ、フォアグラ、パスタ、メイン、チーズ、ドルチェ、小菓子にカフェ。カデルボスコの食前酒にアルバーニの2010のリースリング、アルバーニの2003のオルトレポ・パヴェーゼブリッコ・カラメッリ・ドルチェット・ダルバ2004それに食後酒のマルサラワイン
今回はちょっと品数が多くワインも3種類
どれもいいのだがやはりフォアグラはここが一番美味い。フォアグラなら都心部でもいいものが十分手に入るはずなのだが何故か満足出来るものはない(フォリオリーナ・デッラ・ポルタ・フォルトゥーナを基準にするとどうしても他のお店のフォアグラ料理の満足出来なくなってしまう。)。あとたまにコースに組み込まれることがあるスープもここのは格別である。あと少量なのだがここのパンは非常に素晴らしい。小林シェフの手作りで軽井沢の硬質の水で作るらしい。
また今度は新たな展開があるそうなのでまた楽しみである。

アペリティーボ
カデルボスコプレステージにオランダのロンドンドライジンナンバー3にマダガスカル産バニラビーンズ皿ごと加えて低い温度で熱を加えて香りを移した所で一旦寝かせて漉して冷やしたものをスプマンテで割ったもの
最初の前菜
野生のアナトロッコ(野生の小鴨)の胸肉を強火で焼いたもの、下が小鴨の砂肝、心臓、レバー。もも肉を小さく切ってカラブリア州トロピエの赤い玉ねぎとサルディーニャ産の野生のローズマリーをオリーブオイルを使って炒め煮したもの。上にはチポロットを直火で炙ってトスカーナ産のオリーブオイルをねり、北イタリア・ロマーニャ州チェルヴィアの塩田の塩をローストして刻んだものを少し散らしてある
次の前菜
紙で流通させているフォアグラを強火で塩だけ降りながら焼いたもの、下はチーマデラーパと茹でたニンニクとペペロンチーノをオリーブオイルで炒めたもの、上は野生のカルカテッペをオーブンでローストしてニンニクとアンチョビを炒め、ジビエの骨と筋を焼いて取ったスープを加え煮込んだもの。
スープ
生ハムの皮、ポロネギ、イタリア産人参、ピエトラ、カーボロネロで炒め、野菜のスープに肉のスープを入れて煮込んで半分だけミキサーでピュレ状にして元のスープを戻して全体に火を入れたスープ
白い筋はニンニクを蒸し焼きにして、エシャロット合わせてピュレ状にしたもの。フランス産仔牛の腎臓を薄切りにしてフライパンで焼いたもの。

天然酵母のパンの中にシチリア産のくるみをいれたもの
プリモピアット
タリアテッレにルマーケ(フランス産のエスカルゴ)トピナンプール(菊芋)ロマネスク(カリフラワー)プチドライトマトをストゥファートしたものと羊にチーズ合わせたもの、根セロリを素揚げしてドーム状の型の内側にはりパスタを詰めてオーブンで焼いたパスタ
セコンドピアット
ペルドローグリ 胸肉は薄切りにして網で直火で炙ったもの、下はリコッタチーズの燻製して薄切りしたものとアーティチョークを薄切りしてローストしたものを合わせたサラダとスプリ(ライスコロッケ)ヴィアノーネナノ(ロンバルディアの小粒の米)7年熟成とペルドローグリの砂肝、心臓、レバー、もも肉を炒めたものに野菜のスープを加えて煮たものにロビオラノスタラーナと混ぜ合わせてパン粉をつけて油で揚げたもの。黒オリーブを使ったソース。ニンニクとエシャロットと黒オリーブと種を炒めて野菜のスープを加えて煮て生ハムを加えてミキサーにかけて濾したものピュレ状のソース
天然酵母のパンにギリシャのコリントの小粒のレーズンを練りこんで焼いたもの
チーズ
ロンバルディアの水牛のチーズを表目をバーナで炙ったもの 上にローマのプンタレッラをリグーリア産のオリーブオイルとローストして刻んだが岩塩で和えたもの、黒イチジクをアマーロで煮込んだもの、ロンバルディアのオシェトラの低い塩分で漬け込んだキャビア
ドルチェ
柿を赤ワインと合わせてオーブンでストゥファートしてピュレにして温かいうちにマスカルポーネとねり合わせて冷やし固めたババレーゼとまわりのソースは61%のカカオのチョコレートを湯煎にかけて少しづつ牛乳を加えたチョコラータ
ピッコロパスティチェッラ(小菓子)とチョコラティーニ(チョコレート)
焼き菓子はイタリア産薄力粉とホロホロ鳥の卵と砂糖黍の砂糖にマスカルポーネチーズを練り合わせた中にアマレーナ(ダークチェリー)をシロップで煮込んで寝かせたものを入れて焼き上げたもの
チョコラティーニは61%のカカオを湯煎にかけて溶かして中にギリシャのコリントの小粒のレーズンをシチリアのマルサーラのマルサワインに漬け込んだものを中に入れたもの

今回は前菜の小鴨とフォアグラ(いつも思うけど、ここほど香り豊かな甘みと風味がいいフォアグラに出会うことがないのだけどどういう事?)が特に秀逸。個人的にスープはちょっと塩分が強かったかな?パスタ(今回は珍しくパスタが外)やメインのペルドローグリもドルチェ(ここのドルチェって見た目がちょっと地味なんだけど味わいが素晴らしく豊かなんだよな)も美味かった。今回は小菓子やチョコラティー二も2.3個食べたくらいである。
ここにきた皆様は、わたくしの友人が持ってきたウィスキー飲んじゃったのね(笑)

9度目の訪問
今回はタロッコオレンジが影の主役で色々な料理に使われており一体感がより強い感じである。鴨の心臓は強火で焼いて香ばしい感じであり風味も豊、若干塩強めでビールが欲しくなった(笑)。モンサンミッシェルのムール貝のゼリー寄せはゼリー状なのに味わいがそのままムール貝で塩味はオシェトラのキャビア。食感は芝生だけ。ふぉあぐらとスープは相変わらずフォアグラが凄くてスープもタロッコオレンジが入っていて濃厚ながら爽やかな味わい。リゾットはちょっと珍しい。カルナローリのリゾット。メインが鴨の胸肉でここでもソースは完熟マンゴーと半野生のアスパラガスにスフォルマート。チーズが香ばしい。ドルチェがカンパリとタロッコオレンジを使ったもの。最後はヴァローナを使ったチョコレートにタロッコオレンジの皮。リモンチェッロと一緒に。今回はちょっと早めに解散したがまた来る予定。

8度目の訪問
またこの日もちょっと羽目を外した。今回どれも美味かったのだが美味かったのだが特に白眉はシャントリーと言うスープとフォアグラのロースト多分今まで食べたフォアグラのローストの中では1番の美味さ。フェットチーネも山鳩も奈良鹿もヒメジもかなり良かったのだけどね。特に今回はワインがかなりヤバくって飲み過ぎてしまった。またやっちまった。やはり大人の飲み方をしないと行けないと思った(笑)トミーノチーズも良いし、今回は小菓子が美味かった。また伺います。

7度目の訪問
今回は雷鳥が凄くうまかった。ジビエは雷鳥から始めると言っていたので10月に来れば雷鳥にあたる可能性があり、10月はいいかもしれない。改めてフォアグラにしろウサギにしろムール貝にしろパスタにしろ雷鳥にしろドルチェにしろそしてチョコレートもどれも素晴らしかったの一言である。
6度目の訪問
食前酒がオレンジの苦みと酸味と甘みとフランチャコルタと合わさり美味かったです。
前菜の玉ねぎと腎臓とキャビアが美味かった。スープも美味くて定番のタリオリーニも良いです。
羊の柔らかさが抜群。ドルチェ(結構これいいな)もチョコもうまかったです。(どう書いていいのかな)
他の料理も全て素晴らしいです。
今回は色々話して面白かったです。料理も美味いし空気もいいし。シェフも奥様もお子さんも良い方々です。友達もいい人です。
今回は初めて羽目を外してご迷惑をおかけしました。
でもやっぱり楽しく過ごせるいいお店です。行った人の中には思う所(特にCPは自分は5にしておりますがコストよりパフォーマンスがかなり上回るためと思うため5なんです)がある人が居るとは思いますが自分の中では一年に3回以上(本当は4回以上)は行きたい定番のお店です。

5度目の訪問
今回はボイスメモを使って書いておりますが、凄く手の混んだ料理にボイスメモを利きながら改めて凄いなと思うと同時に料理の食材や調理法に一貫性がある料理なので抑揚が利いていながら小林シェフのポリシーが貫かれた哲学的な料理かと思います。そしてそのことはワインのセレクトにも感じられる次第です。

4度目の訪問
今回は残暑が残る中軽井沢をお店まで歩いていきました。
追って記す。もう忘れましたので5度目の訪問の方に注視します。
3度目の訪問。
前回、前々回にかなり早く行って帰りが遅くなったので更に早くなった。
料理も雰囲気もやはり好きなのは間違いが無い(個人的に)!!!
なんで小林ご夫妻の料理は上手い(美味い)のだろうとつくづく思う。クリームを使わず日本の食材を使わずホロホロ鳥が好きなようで良くメニューに出て来る。そしてきめ細やかな調理技術。
もう言うことなしです。

2度目の見参。
かなりハマった。小林シェフはソムリエの能力も凄い。ワイングラスは特注で、名前失念。
今回は野生のアスパラガスが主役な感じでした。食前酒も今回はプロセッコにグラッパと言っていた(グラッパは何かを漬けたものです。名前失念。)
料理に関しては間違いないな。最初は玉葱を薪のストーブで蒸し焼きをし中心部分だけくりぬいて、中に詰め物(またまた名前失念)野生種のアスパラガスとかホワイトアスパラガスとか、仔牛の腎臓と生のパスタとか仔羊のレア加減は美味い。ワイングラスが凄かった。スープは酸味が心地よく。ドルチェのスープは茴香だったかな。真ん中部分が。あとチーズと小菓子(チョコレートがかなり抜群にうまかった)とエスプレッソとグラッパで最後でしたが。自分は食後酒を全部頂きました。
小林シェフに色々質問をしました。
前菜でいい感じで行ってワインで恍惚感を感じ。食後酒いい感じ。小林シェフのお話を聞くたびに凄いシェフだなと関心(奥さまの技術も素晴らしい)
いろいろ書きたいのですが、メモを取るより小林シェフの話が素晴らしいので心地よく知識を聞いていました。
また伺いたい思いです。今度は何が出て来るのか楽しみです。(また予約取れるかな?)
行く人募集。12月くらいに行きたい。あと9月ですかね。
中目黒時代には行けなかったが。
あるお方とあるお方とお方と自分の計4名にて訪問。
中軽井沢から歩いても行けるが20分〜30分くらいの所。
お店がどんなお店か分からないと通り過ぎると思います。
歩いても行ける距離ですが、タクシーで行った。(軽く50kカロリー位消費出来たかも知れないが冬だったのでちょっとそこまで消費出来たか疑問)
お店はどういう感じか分かっていたので、すぐに発見。タクシー運転手だけが分からない(お店って言う感じでもないし出来立てほやほやだったので)
時間的にまだ早かったので少しテラスや外観を観ながら、冬の厳しさを実感。(夜は満天の夜空)
そして中に、シンプルながら暖炉の薪の香り。アンティークのピアノの上にミシュランの古い物。小さいワインセラー。
1番は外の景色。雪がまだ残る。
注がれる食前酒に注目した。底にはもう淡い色のお酒だろうと思われる物が少量注がれている。そこにフランチャコルタが2度に渡って注がれる。
目の前に置かれた食前酒、小林シェフの説明だと下の液体はウオッカであるものでつけ込んだ物でそれに2度に渡って注がれるフランチャコルタも意味があったのだが、メモを取らなかったので記憶を取り出せない。
飲んで行くとウォッカのアルコールが徐々に浸透して来る。
前菜のフォアグラと野生のキノコ(他のレビューだとトランペット茸)同じ物だと思うが、それ以外のキノコもあったのかな。野生のキノコはなかなかだが、フォアグラの絶妙の火入れは素晴らしい。合わせて食べると更にいい。
ワインも美味い。
次の鮑と古代米だが、米は噛み締めると今のお米とはまったく違う味がして面白い。塩分が強めだが。鮑との相性もいい。
パンは天然酵母でナポリサラミを練り込んだ物。
スープはアーティチョークのフリットにホロホロ鳥の卵を使ったスープ。(卵白か卵黄かちょっと忘れました)
ちりめんキャベツで包んだリゾットこれが凄く美味い。
そしてジビエに
カラスミとチーズに天然酵母のパン(練り込まれた物はグリーンペッパーだったかな?)
ドルチェに
グラッパに
最後のカフェ。
料理の会わせてワインが供され。
ドルチェを食べ終わった頃には外に出て満天の夜空を楽しんだ。ちょっとしたアクシデントがありましたが。
小林シェフの凄い哲学を聞いた。
シェフの哲学と奥さまの2人3脚の料理。
小さいながら貸し切りの空間。暖炉の薪の匂いと温かさ。
何物にも代え難い全ての事象が生涯でかけがえの無い物になりました。
また予約を取りまた違った思い出を感じに行きたいと思います。
