目の前でぱちぱちと火が躍る。
じゅわっと、ぽたっと、焼けゆく肉の脂が落ちてゆく。
いい匂いが胸いっぱいに広がって、
周りを見ると、みんな子どもみたいにほっぺたを紅くして、わくわくしながら
お肉の焼ける様を見守っている。
囲炉裏を囲んで、幸せを待つ。
それが柳家さんの光景。
こちらを訪れるまでは、ジビエがこんなに美味しいものなんだってことが
本当の意味では分かっていなかったんだと思う。
囲炉裏の炭火でじっくりと、ゆっくりと焼き上げられるお肉たち。
一切ごまかしがない。
シンプルだからこそ見える食材の質の高さと焼きの技術の素晴らしさ。
契約している猟師さんから何が届くかで、その日出てくるお肉が変わってくる。
この日は「猪が獲れましたので」って抜群に美味しい猪を出してくださった。
自然の恵みをそのままいただくからこそ起きる偶然性と幸運。
コースは12960円。
・はちのこの佃煮

・青首鴨の皮のねぎま

前半は焼きもの。
鴨も、猪も、鹿も。
肉の弾力がまるで踊るよう。
水分が抜けて旨味がぎゅっと濃縮し、香り高い脂と絡まり合う。
ぶりん、じゅわっ。
美味しい・・・!!
大根は地のものをただ切っただけなのにこれがまたみずみずしくてたまらない。
後半はお鍋。
猪の鍋は自家製の赤味噌仕立て。
コクと深い旨味に溢れた赤味噌と出汁。
猪のお肉がたーっぷり!
うんまい!!
〆に自然薯とごはん。
炊きたての白いごはんの甘みと、自然薯のクリーミーで香り立つ青々しさがもうもう。
おかわり!
とにかく量がハンパなく多い。
ばんごはんいらず。(笑)
そして炭火に当たるせいか、塩が利いているせいなのか、水分がたっぷり必要になります。
ひたすら感動のひととき。
うまい、うまいと言い合いながら気の合う仲間と囲炉裏を囲むこの幸せ。
本物のジビエに出逢う、新しい旅のはじまり。
この日、別室でオフ会をやっておられたWさんご一行ともお目に掛かれて、
大変楽しい会でありました^^
それが、今年の2月のおはなし。
8月に、2度目の柳家さん。
夏は鮎と天然鰻。
非常に大ぶりの鮎は頭の部分も骨もかなり硬く、食べるのに相当苦労してしまいました。
自然の素材を扱うのはとても難しいことなのだなあと。
こちらは完全紹介制。4人以上でないと予約はできない。
そんなハードルの高いお店に2度も訪問できて本当に幸せ。
紹介してくださった方、そしてご一緒してくださった皆様に心からの感謝を。
やはりこちらの真髄は冬。
次回はやっぱりジビエ。
今からほっぺたが紅くなりそうです。(笑)
