その後も年2回のペースで訪れています。
アクセスしづらい地方のお店の中で、わたしがいちばん通っているお店が此方。
特に春の山菜と秋の茸の時季はマスト。煌めくような山菜、珍しい茸、この地で育った、ここでしかいただけない山の恵み。瑞々しいいのち。
いちばん最近訪れたのは、今年の5月。7回目の訪問。
まずは木曽福島の地酒、中乗さん(純米大吟醸・無濾過原酒)をいただきながら。
香りがふわーーっと、どんどん花開く。軽やかすっきりな味わいから、コクのある味わいへ変化する。
★山菜のお皿
・野生のクレソンをキュルノンチュエの生ハムで巻いたもの
・ももえら(山ホップ)
・うどの木の芽酢味噌
・花わさびのお浸し
・うるい
・わらび
何て美しいんだろう。。そして一つ一つの山菜の味や香りが活きてる。しみじみと美味しい。
山菜はいつも庭で採れたものを出しておられるそうだが、今年は山菜が遅く、ふきのとうやたらの芽は南木曽から取り寄せたりもしているらしい。
★伊勢の蛤のしんじょうのお椀
出汁がやはり素晴らしい。旨みが品良く、でもちゃんとそこにある。最高です。
★岩魚のお刺身
捌きたて。ぶりんぶりんの弾力!お醤油は名古屋のお醤油に根昆布のおだしを加えてとろみをつけておられるとのこと。
★王鹿村の鹿肉のたたき
★天ぷら
・ふきのとう。中にアンチョビとチーズ
・こごみ
・岩魚の身で山うどを巻いたもの
・こしあぶら
天ぷらはどれもめっちゃ旨い。香りが豊かで濃い味わいの山菜たち。今回からちょっと創作てんぷらも組み込まれるようになったんですね。岩魚と山うどはベストマッチだったなあ。噛むとふっくらした岩魚とうどの香りが立つ。
★仙台牛のとんびのステーキとアスパラ
「とんび」とはももの近くのお肉。柔らかく脂も乗って美味!特に脂がうんまい(笑)アスパラは甘く香り高く。春の恵み!
★鰻とこしあぶらのご飯、赤出汁
こしあぶらの青々した味わいがさっぱりとさせてくれる。赤出汁も本当に美味しい。
初めてこちらを訪れてから3年の月日が経った。
季節をぐるり、3周り。
こちらに伺う度に、心も体も生き返るような感覚になれる。
現在は1日1組しか客を取っておられないらしい。
色々な面で訪問のハードルは以前より上がっているけれど、また必ず伺います。そうさせる引力のある、稀有なお店。
