2025.6月 再訪(3回目)
赤酢シャリの鮨はお初という友人と訪問。
今回3度目で前回から半年以上経ってるのに
大将覚えてくれてるのは凄いし
相変わらず気さくだし
また行きたくなると思うのは私だけじゃないはず!
~一品料理~
・甘海老の塩辛
甘海老にしては大きいのと
塩辛の質感が別物です。
・淡路の太もずく
沖縄の養殖細もずくとは別物で
食感は大沼のじゅんさいの表面ヌメヌメを
取り除いた、みたいな感じ。
・煮鮑
画像無し(^^;;ですが
ここまで柔らかいのか!と思わせる鮑は
蓼(たで)、わさび、肝ソース付きで、
この肝ソースがアホみたいに旨い!
・真鯛天ぷら
さっくり揚がった島牧産真鯛に
湧別産しじみ出汁の餡がけ仕様で
上品さが滲み出てます。
・鰹/卵黄ソース
千葉産の鰹、卵黄ソースは50〜60度の
固まらない温度での仕上げ、
ニンニクチップが合ってますね。
・イシナギ/焼き物
寿都産のイシナギ(2m級)、
梅肉ソース、和辛子、らっきょう(燻製)
が添えており淡白な味のイシナギにピッタリ!
~握り~
・平目(苫前)
・白甘鯛昆布〆(徳島)
・本鮪赤身(山口/165kg)
・剣先イカ(長崎)
・本鮪赤身漬け
・縞鯵(高知)
・帆立(野付)
・中トロ
・雲丹/ノナ(利尻)
最後にデザートと汁物を頂きましたが
今回握りでは特に雲丹が良くて
子供の頃地元の海に潜って
その場で食べてた味を
思い出した程で旬ものでも
中々これだけの雲丹に出会う事は無いなぁ。
それとシャリが来る度に良くなってる印象で
赤酢でも全く違和感ないですし
日本酒も色々頂き今回も大満足です(^^)
