2025.11月 初訪
「鮨処 凛」で見かけた方が
店を出したとの事で訪問したのは
北3東2にある「鮨処 暁」。
店は凛と同様一斉スタートですので
時間厳守が鉄則なので
早めに着いて外で待ちます。

マダチは吸物で提供、
この時期にしては大きめで
味もしっかり濃厚。
仙鳳趾の牡蠣は日本酒と昆布を使い
牡蠣の旨味がガッツリ引き出されており
こりゃ旨い!
マツカワは11日間熟成、
温暖化の影響か真鯛は島牧ですが
昔じゃ考えられなかった。
鮪は釧路沖ですが
先日行ったえりも沖でも
200kクラスが10本前後網に
掛かったけど漁獲枠の関係で
全てリリースと聞いて愕然。
桜エビ(由比)は前日解禁されたばかりの
貴重もの。
鰆(千葉)はこの時期寒ザワラと言うようで7日熟成ですが脂乗ってます。
もずくは全体の90%以上が沖縄ですが
その中でも僅か数%しか獲れない
糸もずくを使用、コリシャク食感が
何とも心地良いね♪
あん肝(余市)は色々食べてるけど
家で作る蒸したてや西京漬けが旨いけど
ここのは醤油などで味付けしており
これがまたまったりと濃厚で
非常にキケンな旨さですね!
雲丹はこの時期だと
道東の浜中産が有名ですが
夏場の積丹に負けない甘味。
最後に出た水菓子は
新潟おけさ柿のゼリーで
日本酒で味付けしてますが
当然アルコール飛ばしてるので
帰りに運転する連れも無問題(笑)
大将はまだ若いけど
日本料理出身な事もあり
特に出汁の使い方が絶妙です。
握りのシャリは赤酢だけど
酢の効き具合は穏やかだし
シャリの握り具合も口の中で
ほどける感じが程良い。
鮪の仕入れは凛同様「やま幸」だし
ネタも全般に旬を使ってるし
地元でもここまでの鮨屋は
ちょっと無いかもね!
