2度目となる今回は
贅沢食材!末棟シェフのおまかせコース(8,500円)に
ダブルペアリング(9,000円)を合わせました。
やはり「美味」と「美しさ」の共演は相変わらずでした。
フレンチのお店ではありますが
お皿によって「蛍烏賊と山菜のマリネ」は和食風であり
メインの後にはパスタ「ペペロンチーノ」だったり
お料理は多国籍です。
どのお料理もとても繊細で美しいのは
和食のセンスが活きているのかなという感じもします。
アクセントに生姜や桜海老を使われてますしね。
そしてソムリエールの奥様に注いでいただいた
ダブルペアリングは
一皿のお料理に2種類のお酒を合わせるというものです。
2杯ともワインの場合もありますが、
大体はワイン1杯に、紹興酒、カンパリオレンジ、日本酒、
ビールなど、違うお酒を並べて
様々な素材を複雑に組み合わせたシェフのお料理に
色々なアプローチでお酒を合わせることができます。
それにしてもグラスを並べてワインを注ぐ奥様の
柔らかくもキビキビしたお姿に惚れてしまいそうでした。
オープンキッチンのため
カウンター席から厨房が丸見えなのですが
ピカピカに磨き上げられています。
誠実なお仕事ぶりが、こんなところにも表れていると思います。
池袋で一番大切なお店です。
