お酒を持ち込んでのイベントを開催しました。
この時期は山菜が美味しいのですが、ここの山菜の天ぷらは白眉です。
薄衣、火の入り方、油の切れ、全てがパーフェクトです。
他の食材も素晴らしいし、現在秋田で天ぷらを頂くなら、ここがベストでしょう。

天ぷら 酒菜 醍醐で働いていた方が、修行先の「みかわ」の暖簾分けとして開店。
以前「すし匠」のあった場所ですので、内装の雰囲気も抜群。
女将やスタッフの接客も素晴らしく、気持ち良い空間に仕上がっています。
基本はコースのみで、6,000円、7,500円、9,000円の3種。
この日は7,500円のコースでした。
カウンターと小上がりだけですので、十分に目が行き届き、揚げにも余裕が感じられます。
食材は「メゴチ」や「ギンポ」など、江戸前特有のタネを揃えてます。
質も上々。
揚げの技術はさすがと言ってよいでしょう。
ただ、車海老やアオリイカが続けて同じ揚げ方で出てくるのは面白みに欠けます。
ベストの火の入れ方はあるのでしょうが、少し強めに揚げて食感や味わいを変えてみるのも楽しいと思います。
食材のレベルを上げた分、値段も高めですが、
落ち着いた雰囲気で美味しく頂けるので、記念日や自分へのご褒美には打って付けです。
