年に一度こちらで、舌の肥えた仲間とフグを頂く会を催してます。
今回の参加者は6名。
こちらの料理は間違いないですから、身も心も委ねて頂くことにします。
・身皮と遠江(とうとうみ)
フグ皮2種盛りです。「三河」の隣で「遠江」だそうで。
・焼き鱈場蟹
脚の美味しいところをふんだんに。
焼き蟹ってしょっぱくなりがちですが、塩加減・焼き加減とも絶妙。素晴らしい。
・海鼠腸
今まで食べたコノワタの中で一番かも。
酒などで味を調整するそうで、これまた絶品。
・フグ刺し
6人前は圧巻です。
少し寝かせるのが美味しさの秘訣とか。
この日は鴨頭ねぎが無かったのが悔やまれます。
・フグ白子焼き
冷たいヒレ酒があるのですが、まさにベストマッチでした。
・錦牛しゃぶしゃぶ
写真を見て頂ければお分かりのように、抜群の火入れ。
これにクセのない養殖のウドがよく合います。
・フグ唐揚げ
この美味しさは言わずもがなでしょう。
・フグ雑炊
スッポンの出汁、松茸まで入った豪華版。止まらない美味しさです。
厳選された食材を使うのですが、その魅力を最大限に引き出すこの店の技が無ければ、
このシンプルな料理は成立しないでしょう。
確かに高いコースなのですが、折角フグを食べるなら、安いものを何度も食べるよりは
たま〜のご馳走としてこちらで頂いたほうが、感動と幸せが大きいと思います。
