今年も季節ごとに四回お伺いできましたが、なんと、来年はもう、かなり大変らしいです。席数の理由もあるでしょうが、やはり、その端正なと言っていいほど、きれいでスッキリしたお味の魅力ではないかしら。
今年は、松茸の前半に行けたのでたっぷり戴くことができましたけど、フライは星野さんのが一番好きかな。鮎の風干しもなんか、星野さんのが美味しいのです。あと、最近はごはんの御供にも若干の変化ー食べさせ方ーが出てきたりして、地味ーーな感じではありますが、進化しています。
以下は、2013年11月にアップした再レビューです。
定期的に通い始めて1年半以上たちました。毎月ではないけれど一応春夏秋冬のお料理をいただきました。
最近はお弟子さん(というのかな?)も入るようになりましたね。
相変わらず飄々としておられますが、美味しいですね。早春に頂いた鱚のてんぷらはめちゃめちゃ美味しかったなぁ、夏に頂いた、風干しした鮎もおいしかったし、きれいな料理の基本は変わっていません。(お酒いただくと2万円越えになったのが変化かな。でも、この手のお店としてはリーズナブルであることには変わりありませんが。)
合鴨農法の山形米の白ごはんの炊き具合も、(水の具合かな?)ずいぶんと向上しました。
ますます、〆の時雨煮がおいしくてたまりません。

反則(笑)の〆のオトモ・・・松坂牛の時雨煮
『新ばし 笹田』さんが移転された後の、あのウナギの寝床カウンターの中に、同じく『京味』のお弟子さんの星野さんが居ぬきで入られて、店を開かれたから来ない?というお誘いを頂き伺ったのは、ちょうど開店して間もない3月の終わり。
以来季節が変わる度、お伺いする事ができました。
まだ30そこそこ(31歳だったかしら?)のお若い星野さんは、まだ体躯も細身だし、笹田さんのような狭い場所(当時)を凌駕するような大きさまでは感じられないけれど、笹田さんとある意味似た印象があります。つまり、派手さはないのだけれど、美味しさの安定感が魅力です。勿論、日々の研鑽の賜物でしょうが、安定って結構大変なのではないかと、思います。
先行レビューでも書かれていたけれど、ぱっと見、ぎこちなさというのか、まだ手慣れた感じを受けないのは、バックヤードでのご家族(ご両親・妹さん・・・時に替わる)の支えを受けていることを知っているからでもあるのですが、そのイメージのおかげか、逆に出されたものを頂くと「おーっ」となる。修行した年数からいえば中堅の域に入るわけなので、当たり前といえば当たり前なのですけどね。でも、どのお店のご主人もそうだと思いますけれど、『京味』出身の看板は誇らしい部分もあると思うけれど、常にいろいろ比較の対象となって大変ですよね。
だから、そこは忘れて。。。。
いや、すぐに忘れることができました。
一番最初に行った時は、他のお客様を待つ間にチリメンじゃこを出していただいたのですが、そう、その時から、その味わいに心をわしづかみにされたのです。そこからは何が出てくるのかという期待と、そして、出てくるひと品ひと品の多少線の細い、でも「美味しい」の言葉が出てくる喜びの交差に打ち震えるという仕組み。勿論素材についても、良い料理人さんであれば当然とはいえ、種々研究をされている感が出される品から感じられます。
先行レビューで皆さんが書かれている、藁科の鮎が出てきた日には、御造りにはコチの洗を出してくれて、その際コチの食べ方としては最も美味しいと思いますと言い添えられていましたし、確かに美味しい。同じ皿にあった鯛の刺身については「こぶがついている鯛は美味しいけれど、そう簡単に見分けはつかないんです」とおっしゃっておられました。そういう説明をされる時には目を輝かせておられるので、こちらにも伝わってくるというわけです。
ごはんのたき具合は、笹田さんの域には達していないかもしれないけれど、いつもごはんのお供に出してくださる贅沢な「松坂牛の時雨煮」が絶品♪もうー、ほんとこれを食べたくて来てるような。。いえいぇ、一皿一皿の美味しさを味わう為に来ているわけですが、やっぱりこの〆を出されるなんて、反則ですって。ごはんは、一番最初の時は新潟のこしひかりとおっしゃっていたと思うのですが、その後は合鴨農法で育てた無農薬の山形のこしひかりを選んでおられるようです。研究を重ねられている姿勢も感じられて、その研鑽ぶりに立ち会いができることを喜ばしく思う今日この頃です。
