もめんの日本全国 食べ歩きの旅 福岡編
久しぶりの福岡出張
夕方に合流したチームもめんのメンバーと2人
やってきたのは
福岡でお気に入りの「鮨 大和」さん♪
前回の福岡出張のときは
残念ながらお店がリニューアル工事中で
食べられなかったんですよねぇ
今回はリベンジで訪問してみました♪
●お店の建物は改装して新しくなりました
お店の創業は「昭和34年(1959年)」
現在のご主人は3代目
改装前は老舗のお寿司屋さんらしい
渋い雰囲気のお店でしたが
改装後は高級感のある落ち着いた雰囲気の
とってもカッコいいお店になってました
凄いですねぇ
ただ・・・残念なことが一つ・・・
いつも素敵な接客をしてくださる
先代の女将さん(3代目のお母さん)が
改装後はランチタイムにしか
お店に出てないそうで
この日はお会いすることができなかったこと
う~む・・・
今度は昼に呑みに来ようかな(ww
●食べた料理について
まずは、生ビールでかんぱーーーーい!!
ぷっはぁ・・・
仕事の後の生ビールが美味しい♪
改装前はビールは瓶ビールだけでしたが
生ビールも置くようになったんですねぇ
さて、今回も3代目ご主人に
「料理」も「お酒(日本酒)」も
全ておまかせして食べてみました♪
この日食べた料理はこんな感じ・・・
■渡り蟹 汐雲丹 和え■
「渡り蟹」を「汐雲丹」で和え
「子持ち昆布」の上に乗せた逸品
スタートから凄い酒のアテ(ww
シットリとした渡り蟹の剥き身に
汐雲丹の風味と塩味が絶妙!!
また、子持ち昆布がピリ辛な味付けで
プチプチとした食感とピリ辛な味が
良いアクセントになってます
むはぁ・・・酒が止まらない味!!
■おこぜ■
大好きな「おこぜ」やぁ
薄造りされた身は程よく締まった食感で
噛むほどに旨味が出てくる
腹身は脂があってプニプニしてます(w
肝はクセも少なく食べやすく
皮は独特のゼラチン質でプリプリ♪
うん、やっぱり「おこぜ」は美味しい!!
■お造り(鯛、イサキ)■
お造りは「鯛」と「イサキ」
鯛はシットリ
適度に弾力もあって旨味も十分
そして、梅雨イサキとも呼ばれる
今が旬のイサキは身がしっかり
皮目を軽く炙ってあって香ばしい
脂も乗っていて間違いない味!!
また、クリスタルのお皿が素敵な感じ(w
ドイツの「ナハトマン」というブランドの
お皿なんだそうな
ちなみに「ナハトマン」ってドイツ語で
「夜の男」という意味なんだそう

そんなに値段の高いお皿ではないそうなので
家でも使ってみたいなぁ・・・
■蒸し鮑 雲丹乗せ■
蒸し鮑って柔らかいんだよねぇ
鮑の肝のほろ苦い風味も素敵やぁ
そこに、甘味のある生雲丹

大好きな穴子の焼霜だぁ
身がめっちゃ弾力があって
プリップリなんです!!
上からかけてあるのは「玉ねぎのジュレ」
この玉ねぎが甘いんだぁ・・・
うまぁうまぁうまぁ!!
■カラスミ■
自家製のカラスミ
半生タイプなのでシットリしてます
小さく齧りながら酒が呑めますわぁ(w
■甘鯛 一夜干し■
お店で一夜干しにしたという甘鯛
ちょっと塩分が強めですね
淡白な白身と程よい脂
あと、何気に付け合わせの「枝豆」が
香りがよくって美味しいのもよかった(w
■鯖ガリ■
大和さんの定番酒のアテ「鯖ガリ」
脂の乗った鯖に
大葉、ガリ、海苔の風味が
合うんだよねぇ
■おまかせ にぎり■
最後の〆にお寿司
もちろん、おまかせで握ってもらう

脂が乗ってグニグニ系
おろしポン酢がサッパリとさせる
・烏賊
岩塩がかけてある
ネットリとしていて甘い
・のどぐろ炙り
対馬であがったという「のどぐろ」
炙ってあるから脂が融けて
身がトロトロ!!
・アゲマキ貝
有明海で獲れたというアゲマキ貝
シコシコとした食感で
噛むと貝汁がジュワッと・・・
・鮪ヅケ
ちょいヅケ鮪
身はモッチリ&シットリ
醤油のフレッシュな香りも良い
・小肌
〆具合はしっかり目
これで酒呑めます(ww
・雲丹
海苔は使わないタイプ
あまーーーーーい!!
・穴子
炙りたてだから香ばしい
ただ、ちょっと穴子に
脂が少ないかな
・トロ鉄火
中とろを太巻きにしたトロ鉄火
マッタリとした中トロ
間違いない美味しさです
・玉子
最後はほんのり甘い玉子
出汁もしっかり
お寿司屋さんの玉子やぁ
・かんぴょう巻
追加で「かんぴょう巻」を巻いてもらう
もちろん「山葵」を利かせてねぇ♪
しっかりと甘いかんぴょうに
山葵のツーーーンとした辛味が
よく合うんだぁ・・・

いやぁ・・・よく食べた・・・
めっちゃお腹いっぱいです!!

と、ドキドキしましたが・・・
1人17400円でした♪
料理&お酒の量だけでなく
おこぜ、鮑、雲丹などなど
高級食材も食べまくったし
内容を考えてもこの値段は安いと思う
日本酒のラインナップが素敵やし
やっぱり大和さんで呑むのが好きだぁ
また、福岡に来たら呑みにくるわぁ!!
