水道橋の後楽園遊園地の白山通りを挟んだ向かい側の横道に少し入っったところにある能登料理居酒屋さんです。
店主は能登の七尾市出身で地元から毎日朝どれの新鮮な魚を直送して貰っているそうです。
この日は能登出身者ばかりの飲み会に誘われて参加してきました。
刺身はサザエ、ガンド(小型の鰤のこと)、皮はぎの肝和え、炙り〆鯖、のどぐろの盛合せ。
もちろん、どれも鮮度抜群です。
煮物は揚げ茄子の煮浸し、茄子の皮目に細かく包丁を入れてごま油でさっと揚げてから煮るいわゆるオランダ煮です。
包丁の技が冴えているのがよく分かる。
七尾湾のなまこは海鼠腸(このわた)やクチコ(バチコ)といった加工品で良く見かけますが、もちろん生のナマコもコリコリした歯応えと潮の香りが堪らない。
焼物は鰤のハラスを燻製にして炙ったもの、ゴロ烏賊と呼ぶ烏賊の肝や墨を抜かないで干したスルメとか酒呑みの心を揺さぶるものばかり。
揚げ物は自家製のさつま揚げや能登鶏の唐揚げもあるが、なんといっても河豚の唐揚げが濃厚な旨味があります。
そしてこの日のメインは、とり野菜鍋。
石川県の県民食で[a:otrlst,まつやのとり野菜味噌]というのがあり、どこのスーパーでも売っているという合わせ味噌です。
今回の鍋はこの味噌ではなくオリジナルの鍋で鶏肉と野菜をいただきました。
そして残ったスープで鰤しゃぶにして、脂の乗った鰤をいただきます。
デザートは七尾で作っているというイタリアンジェラートです。
加賀棒茶味のジェラートはさっぱりとして口直しにぴったりでした。
こんないい店があったとは知らず、これからは度々通いたいお店になりました。
