池袋から有楽町線か副都心線で一駅の要町に赤坂の隠れ家中華「白碗竹快樓」の料理長をされていた方が、10月に独立オープンしたので行ってみませんかとのお誘いを受けて参加しました。
駅からは2,3分の場所ですが周囲は静かな住宅街にポツンと街場中華っぽいお店が見えました。
店内はテーブル席のみで4人テーブルが5卓に2人テーブルが1卓。2階にも24席あって大人数の宴会にも対応できるとのことでした。
今回は料理7000円コースに飲み放題1500円をつけてもらったとのことです。
メインは中国から取り寄せたという、中央に炭を入れての火使う銅製の鍋を使って、羊と猪に蝦夷鹿を中華風のしゃぶしゃぶにしていただけるというので楽しみです。
先ずはビールで乾杯!
お通しはドライフルーツの棗(なつめ)と胡桃。これほど大粒の棗は珍しく、僅かに甘酸っぱく美味しい。
胡桃はカリっとした歯応えがビールによく合う。
華やかな盛り付けで登場した前菜盛り合わせは、クラゲの黒酢和え、鴨タン香り煮、北京の白菜辛子和え、上海味噌ピーナッツ、行者ニンニク、羊タンという組み合わせです。
初めて食べた鴨のタンは可食部分は少ないが珍味としては面白い。
一番気に入ったのは北京の白菜辛子和え、シンプルな料理なのにどうしてこんなに美味しいにか不思議でなりません。
羊肉の串焼きは、クミンの香りが香ばしくてウイグル料理のようなエスニックな味で美味い。
香港叉焼は最初は叉焼とは分からなかったほど上品で旨い。皮目はパリっとしていて蜂蜜のような甘みがあり、身はふっくら柔らかくて、今まで食べた叉焼の中でも最高レベルでした。
胡麻パンは焼き立てだけどしっかりとした噛み応えがあり、深い味わいがあって料理のたれやソースをつけて食べても負けない力がある。
メインのしゃぶしゃぶ用の銅鍋は中心に炭火を入れて中心の煙突部分から炎が上がっている状態で運ばれてきました。
スープ自体は淡麗で一見するとただのお湯みたいですが、何を使った出汁かは分からないけど旨味があります。
そこに八角や棗を投入して香りを立てると、すでにお腹はだいぶ膨れているのに食欲が盛り上がってくる。
椎茸やエリンギ、キクラゲといったキノコの旨味も加えて沸騰してきたら手切りの薄切り肉をしゃぶしゃぶしていただきます。
先ずはエゾシカからスタート。柔らかくてジビエの臭みも全くなく、腐乳ベースのタレでいただくと蕩けるようです。
猪肉は脂身の甘みがたまらないし、羊も柔らかくて美味しい。
エゾシカと猪はお替りまでしちゃいました。
〆は和え麺。
低加水の細麺でコシがあり、少し甘めのソースにピリ辛の肉味噌と砕いたナッツに香草ともやしをトッピング。
これはランチでがっつり大盛りで食べたいくらいです。
デザートは杏仁豆腐に柿のソース。シャインマスカットが添えてあり、さっぱりとします。
飲み物は中国産の珍しいワインを中心にたっぷりいただきました。
日本ではこの店でしか飲めないレア物ということで、確かに美味しいワインでした。
ただワイングラスが良いワインに合っていなかったのでせっかくの風味が生きてこなかったことですが、この料金で飲み放題にしてくれたので文句は言えません。
