コロダッチというのは小型のダッチオーブンのことで、半球形のと長円形のカプセル型の2種類の分厚い鉄鍋です。
これを使ってフレンチ風だったり、和風だったり、スイーツまで作ってしまう今吉理恵シェフはダッチオーブン料理のレシピ本も何冊も出している美人シェフですが、もうすぐリタイアするという知らせを聞いて駆けつけました。
今後はフレンチ出身の小川将シェフがレシピを受け継いでいくとのことで安心しました。
理恵シェフはキッチンは既に任せてサービスに回っていたのでお話も出来て良かった。
火曜日と木曜日は本物のシャンパーニュが半額になるというので、普段は1万円のボトルが5千円なのでもちろんお願いします。
お通しは洋風おでん。スープで煮た竹輪、うずら卵、大根を串に刺した「おそ松くんおでん」スタイルで出てきたので大笑い。海老のおでんも美味しい。
寒鰤のカルパッチョは鰹のたたきみたいな炙りを大根おろしとポン酢でいただく鰤しゃぶスタイル。
名物の国産豚の特製焼売は鉄板の美味しさで、地黄卵のダッチオーブン玉子焼は冬バージョンでゴルゴンゾーラ入りの濃厚な旨味です。
白子のこがしバター焼き、牡蠣の西京焼きと和風ながらもフレンチのテイストを活かしてワインを楽しむ楽しくて美味しいお店なので、シェフが変わっても応援し続けたいものです。
