「水腰蕎麦=加水率を多くして独特の腰を出す…松茸を割いて食べたシコッとした食感。この食感が無いとただの多加水蕎麦と言います。」
これは店主の石井仁さんご本人がSNSで発信された言葉です。
「水越そば」と言って、水のように滑らかな喉越しの多加水蕎麦を呼ぶことがあるようですが、それとは別物なんです。
この水腰蕎麦の食感をストレートに感じられるのが、蕎麦寿しでした。
今回は鮪の赤身に蕎麦を少なめに巻いた鉄火巻きと、太巻きの具を巻いた五目の2種類の蕎麦寿しを出していただき、その感を強くしました。
一般の蕎麦寿しは作り置きしているせいか、伸びて柔らかくなった蕎麦に湿気った海苔を巻いているので、珍しいけど大して美味くないのですが、仁行の蕎麦寿しは茹でたての極細の十割の水腰蕎麦の独特の腰のおかげで実に美味しいのです。
浅草の観音裏にひっそりと佇む民家のキッチンに久しぶりに再訪しました。
石井さんのワンオペで、1組だけの貸し切りだったので、お酒をたくさん飲んで売り上げに貢献しなきゃと思ったら、日本酒の品揃えも充実していたので、自然体でもたくさん飲んでしまいそうです。
今日のコースは、
鮑の煮物、花巻蕎麦、銀鱈味噌漬け焼き、蕎麦寿し鉄火巻、からすみ蕎麦、春雨中華風、蕎麦寿し太巻き、帆立天ぷら、もずく、盛り蕎麦、バナナプリンと11品が次々と出てきてすっかりお腹いっぱいになりました。

と揃っていたので、一通りいただいてすっかり良い気分でご馳走様でした。
