馬車道の天七さんにランチでお伺いしました。
予約したのは料理長お任せコース、お店のカウンター席に着くと当日の食材が告知されました。
この日は春メニューのようで、車海老、千両茄子、太刀魚、真鯛、ウニの大葉包み、フキノトウ、インカのめざめ、空豆、タラの芽、最後の食事用に白海老が用意されていました。
先付に始まり、上記のネタを職人さんが目の前で素朴に揚げてくれるのですが、普段和食屋さんや蕎麦屋さんでいただいている天婦羅とは別格でした。
ネタを供する度に懐紙が交換され、普通の天婦羅専門店とは一線を画すホスピタリティー。
大根おろしに天つゆ、出汁醤油、藻塩、ささ塩、カレー塩といった3種の塩が用意され、天婦羅ごとにおすすめの食べ方をご教授いただけます。
タラの芽、フキノトウが特に味が濃くて強烈な香りに悩殺されました。
黒毛和牛と梅干の天婦羅を追加しました。牛肉の天婦羅ってどうかなと思いましたが、ワイン塩がよく合います。3日間塩抜きした梅干の天婦羅は甘みが引き立って、甘みが引き立ってデザート感覚ながらも日本酒が合いそうです。
食事の締めは芝海老のかき揚げ丼、濃厚な丼つゆで旨かったです。
最後に別室でデザートをいただきました。香川県の おいり という口の中でとろける麩菓子なようなものとミルクアイスの取り合わせも良かった。
とても美味しくいただきました、ご馳走様でした。
