期待を上回る味とサプライズが味わえる。
菊乃井主人の村田吉弘氏によれば、京都本店と同じ材料、同じ水(京都の菊乃井の井戸水)を使っているため、料理の差はないという。
もし予約するなら、ぜひカウンター席を。板前さんに料理について詳しく教えてもらえる。
そのこだわりがすごい。
菊乃井定番の明石天然鯛。生け簀で空輸され、店で活じめ。身の硬さと旨味を日々目視で確認して提供しているとのこと。
特に驚いたのが、蓋物(ふたもの)。ゆり根饅頭を大根と人参で結んでいるのはふつうだが、饅頭の中にウズラとフォアグラをミキサーにかけたものが入り、餡にはトリュフが入っている。ここまでトリュフを感じた和食はおそらく初めて。
炊き込みご飯も、想像を裏切る。炊き込みご飯の「濃さ」は一切ない。なのに、味がしっかり分かる驚き。
唯一の減点要素は、デザートの「カカオ豆腐」。有名な農園のカカオは、ほぼ感じられなかった。
接客も素晴らしい。また行きたくなる店。(写真は立春のメニュー。仕入れでメニューは変わる)
