新橋の八咫烏にてお鮨ディナーをしてきました♪
大人気の一石三鳥グループから2024/9/25にグランドオープンしたグループ最高峰の鮨店、八咫烏。
ひっそりと佇む入口は少し分かりにくいですが、隠れ家的で大人のデートにぴったり♪
明るく清潔感ある店内は、白木のカウンター8席のみ。
今後、激しい予約争奪戦になりそうですね!

つまみと握りが交互に提供される全23品の内容充実のコース!!
まずは、カツオのたたき、あん肝と奈良漬の和物、ハーブの生春巻きと、つまみ3品からスタート。
カツオ、あん肝は勿論美味しいのですが、生春巻きが斬新でした!
お鮨屋さんで生春巻きって初めて食べたんじゃないかな?!
中身は海鮮が一切入ってなくて、八咫烏にちなんだ8種の見目麗しいカラフルなハーブのみ。
酢味噌ドレッシングでさっぱりと、これが美味しかった♪
握りの始まりはヤリイカから。
厚めに切られたイカには粗めに入れられた飾り包丁で、歯応えが楽しめます♪
琵琶ますは脂が甘くてトロける〜♪
その後、握り、つまみとテンポ良く提供されまして、中盤にいくらの2色小丼。
2色とは生のいくらと、火入れしたいくらの2色なんです!これ初体験!!
絶妙な火入れ具合で半熟のいくらはすこし白く、そして濃厚。
いくらってこんなに濃厚だったの?!
めちゃくちゃ美味しくてずっと食べていたかったです。
白海老のこのわた和えも最高に贅沢な一品!
大間のマグロも赤身、中トロ、大トロと絶品でした!
さすがは一石三鳥グループの仕入れ力で、全てのネタは新鮮で脂が乗っていて美味!
ネタによって舎利の温度を変えて握り、最高の味を引き出す大将の匠の技も圧巻でした!
また良い日本酒が揃っているのも私的推しポイント!
「フルーティーで飲みやすいもの」という私のふわっとした注文から、作、日高見、醸し人九平次、八仙と緩急のついた4種を出していただきまして、お料理をより一層楽しむことができました!
