「たん熊」は万平ホテルの離れにあります。この建物は総檜造りで三井財閥の家を1919年に移築したもので、万平ホテル本体に劣らずこれもまた貴重な歴史的建造物です。たん熊は京都料理の料亭ですが、この鉄板焼きステーキの部屋は6席だけの個室となっております。今回は私たち夫婦と、お隣は4名様のグループでした。それぞれにシェフが付きます。私たちには店長さんが付きました。ゆっくりと丁寧に仕事をされる方で、静かにお話しをされます。鉄板焼きのシェフにもいろいろ個性がありますが、店長さんの接客は上品なお店に合ってましたよ。
福岡県産A5特選黒毛和牛フィレの12,500円のコース。メインのお肉に到るまでの野菜やホタテや鯛や、鉄板で作る生麩のクレープなどの前菜や、料理店のために作られた特注の諸味が凄い。ステーキが出てくる前からすでにこの店を選択して正解だったと思いました。そして鉄板焼きと炭火焼きの2種類で供され、擦り立ての生ワサビと揚げたてサクサクのニンニクチップを載せて食べるお肉は美味いに決まっています。ガーリックライスと野沢菜ご飯を二人で分けて頂きました。最後はテーブル席でデザートを頂きます。ワインセラーには凄いワインが揃ってましたので、その方面の通の方も満足されることでしょう。私は地元のクラフトビール950円とグラスワイン1000円で満足しましたけれど。
