高級食材だけでなく、どうということのない食材も最高の一品に変える京味マジック。
「安い食材にこそ手をかけるのが真の料理人」「味を迎えに行く」(西健一郎)のが京味イズム。
・例えば、京味系の定番ともなっている【芽芋/芋茎の吉野煮】。ひと束数百円の芽芋や芋茎がどうしてこんなに上品で優美な味になるのでしょうか。
・あるいは、春の【うすい豆の翡翠煮】。ふっくらほくほくした食感と、じんわりほのかな甘味。ただのグリンピース(の一種)を炊いただけの料理が、感動するほど美味しくなるとは。
・果ては【うてな(茄子のヘタ)の黒胡麻煮】。包丁で棘を落として素揚げし黒胡麻をすっただしで甘めに煮る…ふつうは捨ててしまう茄子のヘタも手をかけるとこんなオツな味になるのですね。
・【魯山人の昆布とろ飯】も細く切った昆布をだしに入れて泡立つまでひたすらかき混ぜたものをご飯にかけただけのものですが、際限なくおかわりしたくなるほど美味しいです。
これら京味の味をうけつぐお店のなかでも味ひろさんはひときわ仕事がていねいで、派手さはないけれどもとても優しくやわらかな味わい。好みです。
