アマングループ、伊勢志摩「アマネム」元総料理長の稲葉氏が銀座・新橋寄りにオープンしたお店。
朝食は料理長の金子氏がメインで対応。なお、金子氏もアマネム立ち上げから関わったお方。
その美味しさですぐ噂となった「アマネム」の朝食、開業時からいつか食べてみたいと憧れていた中、そのコンセプトに近い朝食が銀座で楽しめると聞き慌てて予約。
値段はオープン当初の8800円から値上がりして11000円。お膳の内容も合わせて若干レベルアップしている模様。
予約時間は朝9時、カウンター席6名で一斉スタート。(10時30分開始との2回転)
さて、食前にはジュース(トマト or オレンジ)、そして冷茶(ほうじ茶 or 水だし伊勢かぶせ茶)へと続く。最初からトップスピードでレベルが高い。
まさに目覚めの一杯。朝からの酷暑にお茶が美味しく一気に飲み干したところ、すぐにお代わりの打診・提供あり。
サービスの細やかさも一級品。
続いて、出来立て豆乳豆腐。
塩で軽く味付け、柚子で香り付けをしただけだが、その分豆腐自体の濃厚な風味と味わいが際立つ仕組み。素晴らしい。
そして、メインの本膳は六品の料理とお新香、炊き立てご飯、お味噌汁の組み合わせ。
詳細は写真にもコメントをつけたが、南魚沼最高級のコシヒカリを丁寧にかまどで炊き上げたツヤツヤご飯をメインに据えて、その味わいを最大限に生かすお料理達。
白米と玄米、いずれも楽しめるが、とにかくお米が美味しく感じすぎで困るほど。
ここで終わりのないお料理は、ホクホクの出汁巻き、炭火で焼いた鰻の蒲焼、といった作り立てシリーズに、鰯の丸干しや太刀魚の漬焼きといった、本膳無しでも一流の朝食と言える品々が次々と提供される。
さらにさらに、削りたて鰹節、奥久慈卵、出汁茶漬け、といったご飯アレンジを無制限にできるお供まで用意され、結局ご飯は5杯食べる始末。
甘未には天然氷から作るかき氷。緑茶かほうじ茶のテイストを選択すると、黒蜜や白餡等でたっぷり味付けされ、これも和の味わい。
とにかく思いつく限りの贅沢ができる和朝食と断言できる。
実はお酒も注文可能なので、今度は前日お酒を抜いた上で、熱燗と一緒に冬の朝食をと既に目論んでいる。
