”京都食と酒の旅” の1件目は緒方さんです。
”新幹線の中で ”サントリー 角ハイボール 濃いめ” を飲みましたので喉は潤っておりますので初めっから日本酒 「農口 山廃純米」 で乾杯です。
目の前でお弟子さん達が立派な ”トリ貝” をむきだします、いやぁ~、本当にデカイ トリ貝で美味しそうです。
「青梅ごはん 砂糖がけ」・・・・・最初の料理がごはんとは嬉しいのですが、上白糖をかけるのはどうなんでしょう、隣のお客さん達は美味しいと言いながら食べておりましたが(笑)。
「松の司 特別純米」
「岩もずくのお椀」・・・・・緒方さんが熱々の揚げたての ”揚げもち米” を入れるとジュジューパチパチっと跳ね上がります、これは美味しいし楽しいかったです。
ガジノ葉(梶の木の葉)をのせたお皿が出てきました。
「お造り」・・・・・間人の白烏賊、上対馬のグジ(甘鯛)、あわじ市沼島の鱧、千切りじゃが芋。
流石、間人の白烏賊ですね、甘さが違います、口中に甘味が広がります、上対馬のグジは甘みとコクのあり上品な味、あわじ市沼島の鱧は皮が薄く肉厚で、甘く、身や骨が軟らかく食べやすい。
どれもが格別の味でした。
「長珍 純米」
「賀茂茄子の生姜醤油」・・・・・肉質に弾力があってとっても美味、こんなに大きくてもペロリでした(笑)。
「鮑 桃のスープで」・・・・・驚きました、桃と鮑とは、鮑も美味しいし桃も美味しい、それらを一緒に食べると微妙な味です、美味しいものが2つですから美味しいことは美味しいのですが、ベストマッチかと云うと、ちょっと首を傾げてしまいます。
「ダブルのハイボール」・・・・・緒方さんの処でもこれとなっちゃいます、日本酒を3合で私はハイボール、家内はまだまだ日本酒です。
「トリ貝の肝とヒモ」・・・・・お弟子さん達がむいていたトリ貝です、まずは肝とヒモです、ちょっと家内の日本酒を一杯、旨いですなぁ~。
「京都府宮津のトリ貝の炙り」・・・・・酢橘とあらめ塩で頂きます。
一人1個づつですがドデカイ トリ貝でしたので食べ応えがありました、甘く、ちょっと磯の香りがあるのが良いですね。
「鱧 水餃子風」・・・・・全粒粉の生地に包まれております、山椒の香油を付けて頂きましたがこのような鱧を食べたのは初めて、驚きとともに、その美味しさにビックリ。
「琵琶湖のウナギ」・・・・・皮が柔らかく、脂が乗っているわりにはさっぱりした味が何とも言えない、炭火の匂い、秘伝のタレ、ふっくらとした白い身、天然ウナギのおいしさを存分に味わいました。
「ダブルのハイボール」・・・・・2杯目
「ご飯3種」・・・・・普通は1つを選ぶのですが、3つを少しづつ頂くことにしました。
雲丹の卵とじ・・・・・おぉ~、堪らん美味しさです
鯛のカレー・・・・・鯛から取った出汁で作ったカレー、旨かったぁ~
蕎麦・・・・・緒方さんの名物、今日のは蓴菜入りの汁で
「新生姜の葛焼き」
緒方さんは冒険者と云うかチャレンジャーと云うか色々と料理を創作をします、2割は大アタリ、6割はアタリで2割ぐらいは首を傾げる時があります、ハズレを恐れては大アタリは出てきません、益々、チャレンジをして頂きたい。
1~2品、今日は首を傾げるものもありましたが、全体では大満足、また伺います、宜しくお願い致します。
