昼に利用
麹町時代のエメ・ヴィベール出身の某スーパーソムリエ氏からオススメされ行ってきました。
数々の名店を渡ってきた氏曰く若月シェフの料理が素晴らしいと言うのと実はジビエなども良心的価格で提供してるというのが訪問の後押しになりました。
人づてに聞いたとこによるとここは一時的に借りてる感じで麹町のような物件が見つかり次第そちらへ移るつもりだとか?
麹町時代や恵比寿を訪問した人には今のビルの中とゆうシチュエーションは雰囲気的な面で弱いかもしれませんが、自分はゴージャス系は苦手なので今のままでも十分な感じ。

感想
クラシックな料理ですね。
今は料理も作ってる某スーパーソムリエ氏がソースに拘り、その原点がここにあるというだけあってソースがやはり美味いです。
ベカスのサルミなどは色だけみると浅い感じがありましたが、逆に?ベカスから取った物以外の余計な物が入ってないせいか?ベカスの香りが強調されてて濃厚で非常に美味い。
過去数十羽食ったベカスの中でも指折り印象深い一皿でした。
さすが
自分はコースであっても一皿一皿で完結してる物が好きであり、コースの構成などはあまり気にせず特に甲殻類が好きなんで全く問題ありませんがアントレとポワソンが海老被りだったのは人によっては思うところがあったかもしれません。
サービスもいう事ないでしょう。
支配人氏以外はあまり絡んでこないのでもっと積極的に客に絡んでいっても良いかと思います。
統括して凄く良かったです。
