カウンター7席ほどの新橋星野。
伺ったのは8月。
いつもながら、身体に染み渡るような出汁が印象的だが
今回一番印象に残ったのは、すっぽん!
初めていただいた”焼きすっぽん”
特有の筋肉質でとろみのある肉がキュッと締まって丸鍋とは全く違う食感。
「こんな食べ方があったとは!?」驚きでした。
定番の芋茎や、食材毎に炊いてある蛸と野菜の炊き合わせ。
鮎は、一夜干しと焼きの2種。
走りのモチモチ揚げ銀杏に、ぷりっぷり車海老の天麩羅。
甘みが口に広がります。
うざくの酸味と甘みのバランスも絶妙。
〆は、定番の牛しぐれ煮、じゃこ山椒に土鍋ご飯。
炊き込みご飯というお店が多い中、白米は星野伺う楽しみの一つとなっています。
出汁が美味しく、野菜多めでポーションも程よく、最後のご飯まで美味しく頂ける。
星野さんの人柄も素晴らしく、大好きなお店です。
移転の話。あまり遠くに行かないで・・・思いが通じそうでほっとしています。
