約一年ぶりに亀戸にある「鳥さわ」に再訪。ここは目黒にある「鳥しき」で修行され、その後は鶏の解体などを勉強された中澤章さんが店主の名店です。駅前の喧騒から逃れるような隠れ家で、外観は「鳥しき」にそっくり。店内はカウンター8席と去年からテーブル席を設けたそうで、スタッフも増えていました。大将に「内臓多めの食べ尽くしコースね」とお願いしてスタートです。
本日の献立
まず飲んだのは『澤屋まつもと守破里』。
さび
かしわ♡
意外と小ぶりな串。男性なら一口で食べれるかも。ブリブリとした食感で、ジューシー。
血肝♡
トロトロのレア。火入れは素晴らしいの一言。大きめな肝をズレないようにハツで止めていて、これが一言で食べた時に心地よい食感を生んでいます。
白玉
ただのウズラの玉子ではない。半熟のトロトロなのだー。
砂肝
はつもと♡♡
すっごいジューシー。火入れも良く、シャコジュワの食感と肉汁が素晴らしい。

大葉の香りと軟骨の食感がいい感じ。

柔らかく、ジューシー。

素晴らしい。この言葉しか出てこない。

リクエストで焼いていただきました。少々薄味で、肉の味がしっかり味わえます。
ここから後半戦かな?『醸し人九平次』でお代わり。
鴨のささみ♡
鶏よりも味が濃く、こちらの方が好み。
背肝♡♡
トロトロとした部分とプチっと弾ける部分があり、脂もあるので美味しい。

鳥スープ♡
一口飲むだけで、口の中全体に膜が張るくらいに極濃厚。温めている時の匂いからして美味しい。
テーブル席が増えた分、バタバタ感はありますが、一人客なのでハイスピード提供していただき、ありがとうございます♡
串は部位によって一口で食べれるボリュームなので、話しながらでも最良の温度で味わえると思います。火入れは忙しい中でも、以前より洗練されていて、炎に抱かれるような優しい火入れを感じられます。
3月にかなりの改装をされるそうで、4月からリニューアルオープンだそうです。春になったら、是非また行きたいと思っています。
