令和5年3月25日、今年も無事にSpecial Grade 3.25記念日を古都京都で迎えることができました。
30年前10周年記念で「桜田」時代の訪問を皮切りに、直近は「和ごころ泉」改めとなった35周年珊瑚記念の訪問経て今回は40周年、ルビー婚記念を「和ごころ泉」さんの京料理で祝うことができました。

京料理とはどんな料理か?と問われたら、映像としてロケーションと料理のビジュアルは幾つか直ぐに浮かびますが、その特徴を言葉にして表し、更には文章にして著せとなると一筋縄ではいかないものです。

○食材本来の味を最大限に引き出す調理技術
○素材を生かす為の出汁。本鰹枯節と利尻昆布の合わせ出汁と最小限の淡口醤油
○見た目にも美しい盛り付けと食器遣い

これらのキーワードを抽象的だけれども一言で著そうとするなら「五行」を駆使した日本料理、そしてその和食の五行とは・・・
五適(品•時•所•価•量)に気配り
五色(赤•緑•黄•白•黒)と
五味(甘•酸•辛•苦•塩)と
五法(生「包丁」•煮•焼•蒸•揚)を駆使した料理を
五感(味•嗅•触•聴•視)で味わう。
更に、これらに季節感とおもてなしの心を加えた料理が「和ごころ泉」の京料理なのではないかと思います。
出汁自体は主張し過ぎ無いけれど、他の食材の持ち味を引き出す本鰹枯節と利尻昆布の出汁は絶妙の加減。
目に見える飾り包丁の技術は当然、口にして初めて気付く目に見えない隠し包丁の技術も秀逸です。
お決まりコース料理が2万円超えは、私たちにとって過分、奢侈と思われる贅沢な料理ですが、5年に一度の特別な日くらいは許されるでしょう。
