フルムーン食べ歩き③/14
今回の食べ歩き本命。
半年ほど前に寿司職人さんから松山に優れた鮨店があるとの情報得て「鮨の間」さん、2ヶ月前に予約しての訪問となりました。
訪問後、ホテルに帰ってから・・・昨2018年、中国四国ミシュラン、愛媛県では唯一☆☆2つ星獲得されたとのこと初めて知りました。やはりな・・・ご店主、大変失礼しました。
○おまかせコース
おつまみ9品、茶碗蒸し、握り9貫
○生ビール、日本酒3種、芋焼酎
初訪問ながら大将と女将は、私たちに対してまるで何度も通う馴染客のように対応しくださり心和みます。
真烏賊新子のゲソの突き出しに始まり酒がなかなか止まらない私たちだからなのか?お決まりなのか?瀬戸内鮮魚のつまみが「間をはかったように」タイミングよく都合9品提供されます。
酒のペースが衰えかけると計ったように握りが登場。つまみと同じくネタは瀬戸内を中心にした地物がメイン、純粋な江戸前ではありませんがとびきりの素材の特徴を活かした「良い仕事」、見た目、香り、舌触り、余韻等々五感全てに感動を覚える技に陶酔します。
どれもこれも絶品ながら、特に印象深かったのは以下4品。
○〆鯖。瀬戸内の真鯖は締めてあるようで締まっていない鯖。塩気は感じても酢の酸味をほとんど感じず鯖の旨みを極限にまで引き出した逸品、あまりの旨さに最後追加して芋焼酎で〆。
○本カワハギの肝巻き。かなり大きな本カワハギ、芽葱と一緒に巻かれた肝の甘みと身のうま味が舌の上でダンス・Dance・旨いだんす!
○烏賊新子・雲丹隠し。子烏賊一匹使いにして、数匹の子烏賊がフレアスカートを穿いて酢飯の上を泳いでいるかのような見た目にも楽しく美しい握り、烏賊の下にはムラサキ雲丹が潜んでいるところ洒落ています。
○トリュフオイルの茶碗蒸し。これは正直驚き(@_@)、椎茸ではなくマッシュルームが乗っているので見た目何か?とは思いましたが口にしてビックリ。
黒トリュフの香りが口いっぱいに広がり鼻腔を刺激します。舌触り滑らかなのは?「クリームチーズ」、小生より先に気が付いたのは相方でした。勿論ベースは和の茶碗蒸しですが、その和出汁を邪魔しないトリュフオイルとクリームチーズ、和の中にイタリアンが潜む鮨の間大将「野間」マジック劇場を満喫しました。
ミシュラン☆☆とのことですが、私たちにとって「そのために旅行する価値のある卓越した料理」マイミシュラン☆☆☆の鮨の間さん、再訪問候補筆頭です。
