突然ですが2014/04/20で閉店です。
別れることは つらいけど

現在はランチのみの営業ですが、
相当混み合っているようで、
皆様時間の余裕を持ってご来店下さい。
マスターの志は新天地に。
予約困難・経営順調の松戸の名店の突然の閉店で、
驚く方も多いともいますが・・・
勇劇場はまだまだ続きます!

勇でおせち
大晦日の昼頃、予約していたおせちを取りに伺った。
数日前に手を怪我をしたマスターがお出迎え!
これは災難!お大事に。
そんな逆境の中で作られたおせち料理は、
一品一品が磨き上げられた宝石のようでした。

ラムと白ワインの夜
今回もコースでお願いした。
メインのラムと桃のような白ワインは、
思わずウットリでした!

中華発東南アジア経由松戸着
JR松戸駅西口から徒歩5分ほどの”中国麺飯 勇”。
今回はオフ会と言う事でレビュアー6名が集まった。
私が幹事なのだが、
店側に伝えたことは「パクチー山盛りOK」という言葉だけ・・・
有名レビュアー様を前にして少々不安なスタートである。
今回は料理4千円+飲み代でお願いした。
最初はハートランド中瓶500ml 500円
私の中でこれが基準なので、
他店で小瓶が出てくるとビックリします(笑)。
*本日のアミューズ山芋と枝豆の葱生姜和え
枝豆と言えばビール
*千葉県産鰹のカルパッチョ生七味唐辛子ソース
鰹もビール
*蒸し鶏と香菜の辛味和え
*ブルゴーニュ・ブラン・キュヴェ・ラトゥール2010年
薄いレモンカラーのワイン。辛口でスッキリだが香りは濃厚な果実を感じさせる。
パクチーの風味と鶏肉の淡泊さ、ワインの香りが幾重にも重なる。
*ずわい蟹入り中華風コーンポタージュ
*大正海老のにんにく香り蒸し香港スタイル
*北海道産帆立貝柱と豆腐のミルクチーズ炒め
*牛バラ肉と夏野菜の中国スパイスを効かせたカレー煮込み
*カテドラルレセルバ2008、ダオ
カレー煮込みなら赤ワイン。軽めと言うことでポルトガルのミディアムボディ。
マイルドな飲み口でガンガン飲んでしまう。
カレー煮込みはスパイスが立った物ではないので、
これくらいが丁度良いかもしれない。
*香港くさやと高菜のタイ産ジャスミンライス炒飯
香り米とくさやでワインもやや負け気味。
応援をお願いする。
*カベルネ・ソーヴィニヨン ナパ・セラーズ2010
フルボディのワイン。しっかりとした果実味、香りが良い。
旨味と旨味!
むしろお腹が空くくらい(笑)。
皆さんも余裕があるようなので追加注文。
*和風担々麺1/2
こちらは大葉、茗荷、山葵という和風ハーブを加えていただく。
パクチーに負けない香りのハーモニー。
辛みの中から主張する鼻にツンとくる山葵。
やっぱり面白い。
*勇名物和三盆杏仁豆腐
*茘枝紅茶(ライチ紅茶)
定番のデザートとお茶でごちそうさま。
人数が多いといろいろワインも楽しめて良いですね。

オフ会の企画を練る!
平日の夕方伺った。
来週に迫ったオフ会の打ち合わせ。
Root:1カベルネ・ソーヴィニヨン
熱く乾燥した気候のコルチャグア・ヴァレーの味わい。
前菜の茗荷と幻霜豚が夏の扉を開ける。
ひき肉が入った担仔麺風スープ。
パクチーが気持ちいい。
アボカドとホタテ貝のフリッター。
アボカドに火を入れる料理は初めて。
これは旨い。
そして餃子の登場!
マスターは点心は苦手と言うが、
中々の実力。
メインは香港くさやを使った煮込み。
これは優しい味。
〆は冷し坦々!
そんな訳で打ち合わせはあまりできませんでした(笑)。

サプライズ2連発!!
今回は白ワインに合う料理と言うことで、
*ルイ・ラトゥール キュヴェ・ラトール・ブラン2009 3,000円
*前菜は冬瓜と鶏南蛮
*冷たいコーンスープ
*海老と白アスパラ
アスパラが柔らかい。
今回のサプライズ第1弾は爆発炒め。
厨房が真っ赤に燃えています。
これは見た目に驚きますね!
*空心菜の爆発炒め
本場の調味料が効いたエスニックな1品。
*牛肉トマト煮
さてサプライズ第2弾は、
マスターのお父上海外土産”カラスミ”を贅沢に使った。
*カラスミのスープチャーハン
パラパラに炒められたご飯はスープに負けない食感を保ち、
カラスミの旨味はスープに溶け出す。
全部飲み干しごちそうさま。
これには参りました!

和風ハーブはじめました(2013年3月)
コース料理では何回も伺っているが、
レギュラーメニューはあまり食べてない。
今回は新作の
*勇式和風担々麺950円
(希望があれば小ライス付)
メニューにはこう書かれています。
和風出汁を使い大葉と茗荷を添えた日中融合担々麺。
残ったスープにご飯を入れて山葵を溶かして
お召上がり頂くのがおすすめです。
今回はご飯はなしで。
最初にスープを一口。
和風出汁と言うことでアッサリという感じだが、
唐辛子や胡麻の風味はしっかりしている。
大葉、茗荷、山葵を入れて混ぜる。
勇はいつも香草の使い方に感心するのだが、
和風の薬味も巧みだ。
大葉、茗荷のフレッシュな香りの奥にツンとくる山葵。
和風ハーブも面白いと感じさせる担々麺。

タイトル驚きのバスマティ炒飯(2013年2月)
マスターがタイ旅行から帰国。
現地のエッセンスが詰った料理をいただいた。
ワインはタバリ レゼルヴァ シラー2011(チリ)3,500円
エスニックな料理にも負けないワインだそう。
注意)
勇ではワインリストはありません。
何となくこんな感じのワインとお願いすると、
在庫のあるワインから持ってきてくれます。
大雑把なシステムです。
*パクチーと鶏の和え物
米を砕いて炒めた粉の食感が面白い。
*青梗菜のスープ
酸味と辛みでトムヤンクン風。刻んだパクチーがアクセント
*てり焼き風チキン パクチーのせ。
山椒を追加してピリッといただく。
厨房に干しているのは豚のバラ肉をタレに浸けたもの。
タイに旅行に行く間は休みなので考えついたそう。
営業していると非常に邪魔らしい。
*青梗菜と干しバラ肉の炒め物
八角が効いて甘い香り。脂の甘みがスゴイ。
*海老と春雨パクチーのせ。
これもピリッとした辛さで
*バスマティの炒飯。
一番の驚き。バスマティの炒飯。
薫り高きバスマティを炒飯に。日本米以上にサラサラ。
味付けは敢て薄め。米の旨さが引き立つ。
これは定番になりませんかね(笑)。
今回も非常に楽しませて貰いました。
コースは3,000円(メニューは都度変わります。)

今回はワイン飲もうかな!
そんな事言うとマスターが

と言う訳で

でコースを楽しみます。
*幻霜ポークのしゃぶしゃぶ。
香草使いが嬉しい。
*水餃子
モチモチの皮の水餃子。スープも美味しい。
*トマトのふんわり玉子豆豉ソース
ワインに合わせてということで
心遣いが嬉しいですね。
バターとワインが合います。
*海老とキノコの炒め物
海老がプリプリ。
*ブロッコリー貝柱ソース
勇の嬉しいところは美味しい野菜なんです。
貝柱のソースがうまい。
*つけ麺
マスターはつけ麺出すのは嫌みたいですが(笑)。
習作ということで出してもらいました!
辛みのあるつけダレとパクチー。
山椒を足していただきます。
レギュラーメニューでもいいじゃん!!
*ブラウニー
たまたまあったと言うことですが(笑)。
これもナパに合うじゃないですか!!

何度も来ているのですが、
山芋入り麻婆豆腐の土鍋ご飯850円のレビュー。
温かいご飯を土鍋でさらに加熱。
山芋と美味しい麻婆を乗せる。
ご飯は加熱される事によりおこげのような感じ。
山芋が食感をさらに軽くする。
いわゆる麻婆丼だけど・・・・
別次元の味です。

夜のコースが楽しい
300件レストランレビューはやっぱり松戸の”中国麺飯 勇 ”
今年の1月にオフ会を行いました。
その時マスターの人柄と料理に引かれ、
早速翌日に、四川白胡麻坦々麺900円など定番メニューをいただいた。
創作中華料理とでも言うのかしら?
工夫が随所に見られて驚きました。
1階はカウンター席のみで禁煙です。
カウンターが禁煙というのが嬉しい!
一人で来ても安心です。
2階のテーブル席は喫煙OKです。
夜のコースが3千円からお願いできます。
定番のメニューはなくて、その時期、お客の好みによってメニューは変わります。
私は毎回3千円コースを!
ちなみに材料の関係で当日・前日予約は対応できない可能性があるので、
数日前に予約する事をお薦めします。
