京都に美味しい肉割烹のお店があるよと聞いて、京都に行く時は絶対に行こうと決めていたお店です。
場所は祇園四条駅からそう遠くないので便利ですね。
店内は明るくすっきりした印象です。
カウンターでいただきました☆
コースは¥12000で、メインのお肉によって、お値段が追加されて、こんな感じで4種類になります。

●芋茎とおにくのお出汁
牛と昆布のお出汁に、青芋茎と青柚子。
すっきり、あっさりして上品なお味です。
芋茎はシャキっとしています。

まったり、絡みつくような旨味がすごい!!
塩、昆布、ポン酢でいただきます。

新玉葱の甘味を加えたお出汁に筍とヒレのお椀。
山椒の香りがしっかりとしています。
ヒレ肉はしっとりと柔らかいです。
●ハラミの角煮と干し貝柱の竹の子御飯
桜海老と干し貝柱の炊き込みご飯です。
きちんと美味しいです。
添えられたハラミの角煮は、しっとりほろりと崩れるくらい柔らかくて美味しい☆
●新子芋と半生このこの牛脂揚げ
お酒に合いそうです。
新子芋がほっくりと美味しいです。
●ウチヒラの霜降りとアスパラのお浸し
フランス産ホワイトアスパラガスに、ウチヒラ、高知のフルーツトマト、土佐酢のジュレ、キャビア。
ウチヒラは内腿の部位で、さっと出汁にくぐらせて冷水でしめています。
これもとっても美味しい~~~o(^o^)o
組み合わせも良いですね。

目の前で仕上げられるしゃぶしゃぶは、しっとりと柔らかく、とっても美味しいです☆

赤味のがっつりした旨味と、とろっと溶けるような霜降りの美味しさと、最高のバランスです☆
山わさびの醤油漬け、塩、胡椒でいただきます。
●旬菜味噌汁、おにくの昆布巻き、ご飯とお漬物
土鍋で炊いたご飯はふっくら、やや柔らかめです。
お味噌汁は京揚げの赤出汁。
ヒレ肉の昆布巻きは、昆布も柔らか~いです。
●御抹茶のシャーベット 白州の香り
あっさり美味しいです☆
お肉のいろんな部位を、いろいろな食べ方でいただけました。
最後まで飽きずにいただけます。
