2回目の茶禅華さんへ(^-^)
基本的には季節ごとのメニューだそうですが、
前回とは少し内容を変えて下さいました。
●茶油素麺
京都の玉露茶と鶏のお出汁に、
三輪素麺、
お茶の香りを移したオイルを浮かべて。
●くらげとほうずき
カットしたほうずきと、
くらげを和えたもの。
●叉焼
ゴウヤの甘酢漬け、
中国の香辛料で煮付けた大豆。
●雉の極上スープ 雲呑添え
奥浜名湖の雉。
上湯。
●鶏腿肉の黒胡椒焼き
岩手県南部鶏を使用。
しっとりと。
●無花果、梅
完熟する手前の無花果と、
話梅の干し梅。
甘さ控えめのシロップまで美味しい。
●くぬぎ鱒 蓮の葉包み蒸し
松茸と鱒、
白髪ねぎ、XO醬、
酢橘。
富士山の麓のくぬぎさんが育てた鱒。
雲南省の早松茸。
他にモリーユ茸や、
冬虫夏草なども使われています。
●千葉 中台菜園 紅ひゆ菜の瞬間炒め
中国野菜専門の菜園で、
無農薬のもの。
●小鳩 胸肉の台湾香辛料(馬告)焼き
腿肉の五香脆皮仕立て
こちらのスペシャリテ(^▽^*)
茨城県の窒息小鳩の腿肉は
北京ダックのように仕上げて、
胸肉は、
燻製して焼き上げています。
んん、美味しい~♪
仄かに香る血の味わい。
薫香や、
パリッとした焼き目が香ばしく、
素晴らしい火入れ!!

サイフォンでいただくスパイスティー。
○台湾の金萱烏龍茶
後でアイスもいただきました。
●冷やし担々麺
前回は温かいのだったので、嬉しい。
こちらの方が少しあっさりと。
●桃の台湾かき氷
桃のジュレ、アイス、ピューレ、
タピオカ。
●杏仁豆腐 二つの温度で
前回は温かい方がとろんとした感じでしたが、
今回は少しぷるんとしたテクスチャーに。
次回は上海蟹コースを楽しみに伺います☆
