やはり素晴らしい。道内最高峰の粗挽き蕎麦だ。
今回は一番乗り。それは優越感もあるのかも知れないが、時間勝負の蕎麦…要はその日のお客として最も良い状態で味わう事が出来るのだ。(一部の熟成させる蕎麦を除く)

もはや説明不要、道内最高峰の「粗挽き蕎麦」は力強く男性的、その粒子感、しなやかなコシ、計算された太さ…このタイプの魅力を最大限に活かしきっている。長年通っているが、この時期でも十分な味わいを保っており、蕎麦粉自体の小さな季節変化意外は何時もクォリティが変わらない所も流石の一言。今回も噛みしめて十分に甘い。
おそらくは蕎麦に対する意気込み、探求心、センス、そして経験値が素晴らしいと共に、奈川在来種の名生産者である落合氏との信頼関係により、その時最高の実が届くという実力も保持。例えるならば素晴らしい粉、素晴らしい水…「大自然の雄大なるパワー」をしっかりと味方に付ける蕎麦なのだ。
汁は割とサラリ甘口寄りで節のコクも太いタイプ、一見地味で素朴ながらも本格派。こちらの野趣に富む蕎麦にマッチするように計算された味わいだ。汁が洗練され過ぎて独り歩きする事無く、しっかりとパートナーである蕎麦の特性を掴み、その長所を活かす内助の功。しかしながら輝かしい個性の蕎麦に存在を消される事がない芯の強さもあり、その姿は出来た女房であり、その存在無くして蕎麦は決して輝かず。
そして更には「そばがき」の魅力。こちらも羊蹄山エリアらしい、素朴でダイナミック、しかしながら繊細な魅力も秘めた一品だ。ふうわりとしながらしっかりとした弾力のコシ、噛みしめれば穀物の滋味と甘味が溢れ出してくる幸せ。こちらも大地の力を最大限に練り込んだ「試される大地、北海道の答え」のようであり、食べると体にピュアなエネルギーが湧き出てくるよう。そのままで、岩塩で、砂糖醤油で…楽しみも色々。蕎麦には色々な感じ方、楽しみ方があると実感できる。
嗚呼…今日も得られた幸せ気分。感謝の気持ちをお代に乗せてお会計。いつ何時もキビキビ親切な女将さんや、人当たりの良いご主人も変わらずに真狩の至宝「いし豆」で輝いていた。

今回は平日11:00に到着、運良く一番乗りとして車内で開店を待ったが、すぐに4~5台の車が後に並んだ。現在一巡目で入店出来るのは4組程なので、時間には余裕を持って訪問したい。こちらの蕎麦は、蕎麦をそれほど食べない方々にもその違いや魅力が解りやすいタイプなので、老若男女、多くの人に味わって頂きたい。
