予約して訪問。
店内はとても明るい。木目のカウンターが綺麗。
高級感漂う室礼。カウンター内にいる大将が笑顔で挨拶。
アラカルトメニューはなくコース料理のみ。
基本的に予約みたいだけど予約していない客にも対応。
予約していない客にはその場でコースメニューを決めてもらう事になるそうだ。
ディナーは9800~19800円の5コースとニーズに合わせて選択肢が広い。
実際予約してないカップルが隣に来たけどサイトのコースを見てオーダーを決めていたよ。
今日は19800円の特上寿司会席。
日本料理と寿司が交互に出て来る内容。
メニューに載ってなかったけど最初に乾杯スパークリングをサービスしてもらったよ。

お料理はちょうど良いテンポで出てきます。一皿も量的にベストな感じ。
季節の品々を少量多種で味わえるのは嬉しい。
ホール担当の店員さんは客の事をよく見てるわ。
お刺身系はカウンターの大将から届けらるんだけど、火が入った物はホールの店員さんから。
こちらが一皿を食べ終わって余韻を十分楽しんだところを見計らって次の皿を提供。
客のペースに合った提供スピードを実施できるのはおもてなしを重視してる証拠。
大将は還暦オーバーかな?
魚の事はとても詳しかった。
素材に詳しければそれに合う料理法で料理を仕上げる事ができるんですね。
魚は獲れる時期によっても火加減や塩加減が変わってくるだろうし。
濃い味の素材に濃いソースをぶつけたり。
また違う種類の味の濃い素材にはそれを損なわせないようピンクソルト等のシンプルな調味料を添えたり。
お醤油もジュレにしたり泡醤油にしたりとの工夫。
直接お醤油を掛けたり付けたりするより口上りががソフトになるね。
とても美味しいお料理の数々でした。
デザート前にはこちらのお腹の具合を聞いてくれる心配り。
あとちょっと食べたいと答えると本日のお勧め寿司ネタを目の前に披露してくれた。
こんな立派なネタ見せられたら食べたい気持ちが高まるよね。
最後はフロアー担当の方がエレベーターまでお見送り。
ゆったり2時間以上。贅沢なひと時を過ごせましたよ。
