ほぼ蕎麦ツアーな愛媛の旅ですが、初日の夜は
相方が凄い店を予約してました!
全国の寿司好きなら知らん人はいてないであろう
松山のくるますし♥️
今まで他人のレビュー写真を指を咥えて見てる
だけでしたが、遂にその高貴な握り、酒肴が
自分の口に(´,,•﹃•,,`)ジュル♡
予約時間に到着すると、ちょうど夜の一回転目の
お客さんがまだ出てくるタイミングだったので
店内の待合室で待機。
そしてスタッフさんに呼んでいただき席へ♪
目の前には美しい吉野檜のカウンター♥️
上には吉野杉の天上(´。✪ω✪。 ` )
ロケーションは抜群(*•̀ㅂ•́)و✧
あとは食べるものだけ( ̄▽ ̄)ニヤリッ
そして、その食べるものがエグすぎた‼️
とにかく出てくるもん全てが旨い、美味いの
オンパレードで料理が素晴らし過ぎるがために
レビュー内容が「めちゃ美味しい」だけの単調な
ものになるのであえて感想は書きませんww
その代わりに食材の説明や調理工程を覚えてる

では、愛媛県の魚をふんだんに使った超贅沢な

愛南町で水揚げされた10年ものの伊勢海老を先ず
油通ししてから炭火で炙ります。
それを濃厚な海老味噌で和えていただきました♪
スタートから飛び道具が炸裂♥️
◎鯛の出汁 大島
シンプルだが滋味深い出汁♪
◎鯛の刺身 大島
今治の大島で穫れた鯛を、行ける伝説と化してる
カリスマ漁師の藤本純一さんが夜中の3時に
神経締めしたものです。
もう見ただけで味の想像はつきますね(≖ᴗ≖ )ニヤリ
◎ヤイトハタ 愛南町
愛南町の100㌔もののヤイトハタを「煎り酒」と
いう梅と酒で作った太古から使われている
調味料を上からかけていただきました♪
◎黒鮑 肝ソース 二神島
松山沖の二神島の黒鮑を調味料を一切使わずに
体液だけで6時間煮込んであります。
この柔らかな鮑を肝ソースをたっぷりつけて♥️
残った肝ソースはシャリを絡ませてリゾットの
ようにいただきました(*´﹃`*)グヘヘ♡
◎イナダ 伊予灘
伊予灘でとれたイナダを皮目からじっくりと
焼いては休ませ…を繰り返しステーキのように
焼き上げたものを、アサツキ、生姜、山葵を
合わせて丸めたのを上に乗せてサッパリとした
ぽん酢ダレでいただきました♪

今回はスタートからゴールまで感動の嵐♥️
大将はまだ若いけど最年少でミシュラン二つ星
を獲得したというこれからの日本の寿司業界を
背負って立つ逸材✧*。(ˊᗜˋ*)✧*。
藤本さんの魚ばかりにスポットが当たりがちだが
松山から近い漁場なら大将自らが神経締めとか
血抜きを魚に施すみたいです。
正しく魚を愛して魚に愛された男やね(笑)
この店の旨さの衝撃の余韻はレビューを書いてる
