前菜
新玉ねぎのお豆腐と車海老の煮浸し。
太白油でソテーした玉ねぎをピューレ状にし、くず粉で固めてお豆腐にしたもの。
玉ねぎの甘さとほんのりと香ばしさ。
ジュレと柚子の香りで絶妙な。
車海老のプリっとした食感も楽しい。
揚げ物
大根と牛蒡の揚げ物。
牛蒡は餅米を砕いて。ざっくり感としっかりした味付け。
いちごの白和はマスカルポーネチーズ、
甘酸っぱくスッキリ爽やかでお口直しにピッタリ。
お造り
奄美のヨコワ、瀬戸内海の鯛。
腹身の脂とはまた違うジューシーさ、
弾けるような弾力に驚きます。
新牛蒡のお醤油と大葉のお醤油、
塩わさびをお好みで。
いずれも香りが良いです。
腕物
まずは山椒の香り。
豆乳饅頭とのことで濃厚な大豆に、
レアの鴨肉がのります。
優しい味わいですが鴨の味が豆腐に移っていい感じ。
焼き物
鹿児島黒毛和牛のいちぼ。
2時間かけて仕込みをしているそうで脂がのりジューシー。個人的には一緒に出された石焼で少し焼くのが好み。ポン酢でさらっといただきます。
箸休め
糸島ウニの茶碗蒸し。
磯の香りと甘味の凝縮。
お食事
季節のご飯でホタルイカの釜めし。
サラダ・きんぴらごぼう・西京味噌のお味噌汁。
香の物。
サラダドレッシングも自家製。
デザートとお抹茶
りんごと餡子の最中とお薄が出されました。
パリパリの食感にフレッシュのりんごと餡子の組み合わせが面白い。
ドリンクにりんごジュースを頼んでいます。
ほんの少しお抹茶あり、りんごに合うの⁈と思いましたが、お茶の香りと合わさり爽やか。
京会席をベースに上品な仕上がり、
にしても総じて意外性とびっくりの連続。
これとこれの組合せでこうなるとはな⁈
たまたま予約が私だけで、
いろいろとお話しさせていただき楽しい時間でした。
不思議な経歴をお持ちです。
思い切った行動力と実践力が素晴らしく、
それが型になっているんだろうなぁと。
久しぶりに感動したこの日この時、
1年前の利用であれから口コミも入り実力に相応しい評価が入っています。
再訪したいと思いながらなかなか叶っておりませんが、その時を楽しみにしています。
