広島に来たら是非食べたいと思うものは数あれど個人的には「穴子の薄造り」。ハイあのフグ刺しをイメージしていただけば頷いてもらえると思います。『マツコの夜の巷を徘徊する』で初めて見て広島に行ったときは是非食べたいと思ったのでした。ネットで検索した結果この店が一番透明感があり一番薄いと思いツレを説き伏せ1ヶ月前に予約した次第です。
登場した薄造りは本当に皿の柄がハッキリ見える程の薄さです。他店では白く濁っていたので、この店の板さんの腕と穴子の鮮度両方が素晴らしいだろうと思います。一口目は味と食感を噛みしめ2口目はおろしポン酢を付け相性を確認してその後は長嶋茂雄氏ばりに3切れ位をザクッと掬い地酒を含めばもう至福の時間ですね。
次は白焼き。なぜか皮面を上にして登場です。少し焦げがある程度の絶妙な焼き加減でパリパリ、内側は一切焦げ目がない黄金色。素晴らしい。穴子はあっさりしているので鰻よりも白焼きが合うような気がします。
とりあえずと注文した漬物盛り合わせの広島菜が日本酒にシックリきて空港でお土産として購入いたしました。
