蝦蛄好きの小生にとってこの日先付け的に供された蒸し物三種(他に蛸、鮑)の中の蝦蛄はシーズン最後だと云う。
なんて幸運なこと!(幸先良しか)
寿司店だが決まったコース、メニュウは無く主人によるツマミと握りの融合的コースのみ。
この日の料理の内容は写真を参照にされたし。
焼物、蒸し物、椀、口直し(水茄子、胡瓜)、握りが絶妙な組み合わせ又タイミングで提供され最後まで飽きず食事が楽しめる。
ネタの切り身を乗せて握っただけの寿司は只の刺身ご飯(無論ツマミも)、ならばネタには一仕事が施されて初めて江戸前というもの。
藁で炙られた鰹や最後に目の前にてバーナーの火で完成される焼鯖の棒寿司などはその細やかな仕事振りが窺える。
日本酒のラインナップも季節に合わせて吟味されているようで初夏に向うこの頃は生酒や原酒が多かった。
そんなところからも判るようにこちらの寿司は単に食べると云うよりは酒を楽しむ為の寿司(無論小振りである)ではなかろうか。
主人の付かず離れずの心地よい接客と相まって仕事が施された江戸前の寿司をカウンターで戴く贅沢。
まさに大人に許された至福の時ではなかろうか。
この日は少しばかり飲み過ぎたせいもあり、会計の単価が上がってしまったが次はじっくりと料理を楽しもうかと反省しきり。
